My mam is from El Salvador. We have something called "curtido" which is a pickled thin cabbage with red onion, oregano, carrots, vinegar and sometimes jalapeños. I say it's kimchi's latin cousin 💕😁

You can find them at Korean grocery stores.
@@pinkeangst thank you for your reply. I tried so hard to find them there, none of them had them surprisingly. I went to several in the CBD but sadly nothing, I shall continue the hunt.
Maybe you can ask the Korean grocery store management to special order them for you. If you’re having a problem finding them other people probably are as well.
I love Kimchi but can no longer eat garlic. Have you tried it with no garlic?

I've seen recipes that use nori/seaweed as an alternative to using fish sauce. Hope that helps. Lee :)

How long do you let kimchi ferment before it is ready to eat?
you can eat it immediately! once my mom puts her kimchi in the fridge, she typically waits 1-2 weeks before she uses it for recipes (dumplings, kimchi stew, etc).
The recipe I've using from one site I found years ago didn't have flour in the ingredients so it was basically gluten free. I never knew kimchi has flour in it. Gotta be careful and ask first if I am ever served kimchi in the future (so far I have only had my homemade version).
It’s traditional to use sweet rice flour, which is gluten free. This recipe using wheat flour is not typical.

@@thatismam isn't it mostly the salt?...sauerkraut doesn't require flour mixture...I believe it is just salt and cabbage.
A lot of recipes use a type of rice flour too. Either way there is a starch! You might have to look for a keto-specific recipe, rather than aiming to adapt this one.
Yes you are right for sourkrout i make it and it works for me. But this one I really don't know.

The carbohydrates are metabolized during the fermentation process, so there will not be a significant amount of carbs from the flour.
