    Making of uncle Rikuro cheesecake in Osaka, Japan. The world famous jiggly cheesecake served is fresh out of the oven and will run you about ¥675 = ~$6 for a whole cheesecake. The cake can be enjoyed hot or cold. Yea Japan has the best street food I've ever tried by a large margin

      Bruuuuuuh
      He was mixing it really hard at the start for one reason! That would be because the dense part of the batter goes to the bottom and the foam stays at the top. If he didn't mix, the cakes would not be evenly fluffy.
      How do I know? I make these cakes alot at home.
      It's reaaaaly easy, I'm not even a pro. I just analyze the shit out of cooking techniques

    Had the whole cake over a week while on vacation - it was the most amazing thing. Absolutely delicious! A MUST try while in Osaka.

    That looks amazing! Reminds me of the one we have here in Toronto called Uncle tetsu. It originated from Japan as well. 😇 was a huge hit here! It's just regular foamy cheesecake, not jiggly like these ones. Even the symbol is quite similar! Haha

    What I'm getting from these food videos is that Japanese people don't mind waiting for their food to get done as most of it is made to order. Years of working at the food court in America has made me weary of having clients stand around too long as they start to get impatient and screaming for the manager

      ***** We have a timer on top of every order that starts as soon as we put it into the system, if it goes over three minutes our manager starts shouting at us to get it out even when most of the time we're just following all the procedures to make sure everything is actually cooked and looks good. Around that time costumers start giving us dirty looks and pressuring us. It's like they want perfect food at the snap of a finger.

      no t cool That's so true, people are too disrespectful towards the staff, and managers abuse their power way too much. I've hated all my food chain partime jobs because of that, I've had someone throw the money to my face once, I got yelled at by the client AND the manager. I'd prefer to wait "more than what's supposed" to eat something that I'll enjoy, rather than crappy food AND the staff work their ass off with stress writed in their face, I get sad looking at someone working in that state, is a lot of pressure and people acting like that puts more stress to it...but humans are too selfish.

    Question, is there a label in which tells you what kind of ingredients it has?
    Just curious, because I made the recipe from the CookingWithDog Channel (which by the way is super scrumpcious, in Europe cheesecakes are served cold anyway) but saw other recipes on youtube. So i was wondering...

    this is so elegant!!! I must go to Japan to visit and explore but first to learn their language its be rude to expect them to speak our language and us not even try. idk why Americans feel so entitled now a days. I was in France 2weeks and spoke French enough to get me by and they were happy knowing that I spoke 3 languages.

    i made this the other day, so good. I have a giant double oven so i decided that I was gunna premake a bunch of these for friends and family. My mom woke up and came downstairs to me production baking at 4 am. I made 36. 12 at a time. I have too many cake pans now though. I can totally sell them but I'm not sure if its legal to or something.

    noticed how he's not worried about deflating the mixture, recipes normally ask to fold. maybe that's why the top has no crack?

    Considering how fluffy it is I'm surprised at how much he whisked it before pouring it into the pans: everything tells me that if you whisk it that much rather than folding it gently, the egg whites would deflate the cake, rather than make it even fluffier and even more jiggly.

      No you have to refrigerate them after a few hours so they stiffen up, but my girlfriend actually thought the cake tasted better cold

      For me its taste like regular cheesecake, but the texture is like s tiramisu maybe softer then tiramisu....

      yea very soft texture not a really strong flavor but I say that in a good way because you can eat a lot of it without feeling overwhelmed if you have ever had European cheesecake it's more similar to that when warm. When it is cold it is more condensed and tastes more like US cheesecake.
