- Gyoza! Make some of Caiman's favourite food from Dorohedoro. Not completely faithful to Nikaido's recipe but it turned out amazing.

Recipe
Ground pork 500g
Shittake mushrooms 1 cup diced (4-5 fresh)
Green onion 3 stalks
Garlic 3 cloves
Ginger 1 knob grated
Shiso/Oba leaves 1 bunch (20 leaves)
Dumpling wrappers
Chinese 5 spice
Salt
Pepper
Soy sauce
Sake
Potato Starch
Grate ginger, diced shittake, green onion, mince garlic
Reserve half of oba leaves to slice in half, chop up the rest
Mix all your wrapper ingredients
Season with spices and seasonings to taste
Grab one dumpling wrapper, lay half of oba leaf in middle, add a small spoonful of filling
Wet the edges of the wrapper with water
Shape into taco, start sealing from one corner using small pleats
Heat up a pan with oil
Place gyoza in pan abd brown the bottom
Add a cup of water, cover and let steam
Remove lid, mix 1 tsp potato starch with water, pour to bottom of pan
Fry until the bottom is crispy

As I'm eating store-bought gyoza, I was looking for a Dorohedoro recipe. Out of all the ones I've seen, yours is the most accurate, with whole shiso leaf and crimped edges. Great video, thank you!

Dorohedoro is criminally underrated and it’s animated by Mappa the same company that animated Jujutsu kaisen,Banana fish,god of Highschool,and the final season of attack on Titan now they are currently working on Chainsaw man

I never thought of using a starch to enhance the crispiness on the bottom of my gyoza before, i will defiantly try this out!

I totally forgot that oba gyoza is an original recipe from the story. I was babbling about me wanting to try them out in some restaurants where I live for so long that I feel kinda heart-broken now that I learned the truth...

Glad to see my suggestion brought into reality! This looks amazing, I've never made gyoza before, but I might have to try it. Tonio's spaghetti is now something I regularly cook, thanks largely to channels like this!
The mangaka who made Dorohedoro has a new series out called Dai Dark, and it's only got a few volumes out in English now, but its main character ALSO has a trademark favorite food: Meapswiches (basically meatball spaghetti sandwiches). I love how food plays such a big role in her stories lol
