A longarm has been on my list for *years* but we just don't have the space... one day, though! In the meantime, I actually free motion quilt on my domestic machine. I have a couple videos on that here...

Love the gateway drug reference. I have done a few quilt as you go types my favorite is quilt as you go crazy quilt. That you add fancy hand stitching to after. Pieces of fabric, different colors, all coming together. Perfect if you want to use up some scraps that are otherwise wasted.

Second: Yes, you can do it on a larger quilt, not just small pieces like table runners. 🥰

It is often easier to do it the whole length. So, cut your backing and batting larger than your finished quilt size, and add the strips just like here. The problem can be if you have a smaller machine that you end up not being able to fit all of that to the right of the needle. In tat case you can make multiple pieces and then put those together - but the method for putting them together is super fussy because you already have the three layers ... there are techniques to do it, but I don't love any of them so I don't teach it. Maybe I'll find a technique I love someday!
