Very informative video. Thanks for this. I am not a fan of Al Taza (I remember you weren’t as well) because of the over creaminess and fat in their shawarmas, and yes, their price, but this video has gone on to show that they strive for utmost quality in their products and prep.
Issue is the cooking of chicken on the skewer. There’s no way of ensuring that uncooked chicken doesn’t fall into your plate of shawarma.
The cooking time is way too less. If you look closely, its just one side that’s getting cooked to a crisp, and the other side is still a bit on the raw. And on the cut side, you can see pink of the raw chicken. That’s the worrying bit.
In the Gulf, they use a lot of heat and flame to cook the skewer, that’s not the case here.
