INGREDIENTS:
🔹 6 chicken thighs bone in, skin on, trimmed of excess fat
🔹 Kosher salt and black pepper
🔹 Extra virgin olive oil
🔹 1 small yellow onion chopped
🔹 2 celery ribs chopped
🔹 ½ red bell pepper chopped
🔹 ½ green bell pepper chopped
🔹 8 ounces mushrooms (white or baby bella) cleaned and sliced
🔹 3 garlic cloves minced
🔹 1 tsp oregano
🔹 3 springs fresh thyme
🔹 2 tbsp fresh chopped parsley more for later
🔹 Pinch red pepper flakes
🔹 1 cup red wine
🔹 28 ounce can crushed tomatoes

I made this for my family and they loved it. I only made two minor changes, I substituted thyme for fresh basil and I added olives.

Made this recently for my wife and she loved it! Since there is just the two of us, we ate the leftovers for a couple of days. I determined that I will make the sauce by itself without the chicken and eat it over pasta! It was quite wonderful!

Your recipe gets the Chef's kiss! I watched all the chefs' recipes, and this is the closest to my grandfather's recipe. The only things I did different is use chicken breasts cut in half to a size of a thigh and floured before frying. Also, I added sliced Kalamata olives and capers at the end.

I just made Cacciatore for the first time last night and I can't wait to make it again. I went with an interesting approach as I used absolutely no salt in the sauce and instead used Kalamata olives and poured in the juice from the jar to bring a briny saltiness to the dish. It came out so awesome. I also used a slow cooker to simmer on low for several ours so the chicken was absolutely fall off the bone tender.
i do that also use the kalamata, green olives and caper juice and less salt
My grandma made this for us, growing up. All that she did, though, was buy Chicken Tonight cacciatore sauce and pour in over the baked, cut up chicken. She was a good cook, though. Glad to see a more homemade version of this recipe here.

What are your thoughts on sea salt vs. kosher salt? It appears you typically use kosher. I'm working to understand the variation. Also, when you add parsley, which you do frequently, do you use Italian parsley or not?

It's reassuring my cacciatore looks like your version. I made mine with the wine and stock and and everything else, thyme instead of basil and carrots too. I like a lot of sauce so I MAKE a lot of sauce. I make it on Sunday then don't have to cook for days. I've decided to add it to pasta because I found potatoes don't really go that well with it. My dad used to cook us his version… which was hot rotel canned tomatoes over rice… i still eat it this way … but i think the rice or noodles are better than potatoes

Very nice recipe, thanks! A suggestion - strip the thyme leaves from the woody stems. The stems are inedible and will stay tough.

You don't have to drink alcohol to cook with it. Trust me, it really does something special when you cook with it. There's nothing like it. Give it a try. They sale wine in those small single serving bottles if you're worried about the waste

@xxxmickyxxx3 , when U cook with alcoholic beverages, the alcohol itself cooks right off...religious or not, there won't be alcohol in it when the meal is done cooking. 🚫🍷🚫
...if sceptical of the wine seeping into the meat 🍖 etc., cook the wine in a sauce pan alone until U KNOW the alcohol has evaporated...Google how much time's needed. 🎓 😎

What can a person use instead of wine?
I'd say (my opinion): Boil the chicken in water (not that much if you cook small pieces of chicken) and then save the broth liquid, and put it in the pan mixture with all the veggies, along with the tomatoes. Simmer to a boil. Voila!? Also, you can put those ready for cooking chicken broth squares. The taste will probably be bland compared to the taste and smell of wine but if we don't want wine we need to find a substitute for it.

Yes it certainly looks very delicious. However, not sure about the red and green peppers. I might leave it out and add black olives and carrots perhaps a bit of golden raisins to give it a slight sweetness. And instead of the white onions, I think red onions will give it more punch or slight kick and I would add extra garlic, because I like garlic.

I HAVE BEEN COOKING FOR 80 YEARS, I REMEMBER MY MOM COOKING THIS WHEN I WAS A LITTLE BOY. EVERYTHING GREAT ABOUT YOUR RECIPE ACCEPT FOR THE CHICKEN. WHY NOT USE: EXPENSIVE CHICKEN BREASTS WITH NO SKINS OR BONES? NOW YOU WOULD HAVE THE PERFECT MEAL.
So no need to put it in an oven for so a long time. This is better. But is this still Authentic? What is the difference, if cooked in the oven for 45 minutes????? just dryer? can Canned Mushrooms be used instead? Plus adding black olives will make it look prettier.
