FILIPINO CHICKEN BARBEQUE

  • RECIPE: yield 6-8 servings
    MAKE THE MARINADE
    (made the day before)
    5 lbs boneless and skinless chicken thighs
    1 tbsp black pepper (coarsely ground)
    ½ cup brown sugar
    ¼ cup honey
    ¾ cup sprite or 7-up
    ½ ea fresh lemon juice (or 5 ea calamansi juice)
    320 grams (11-12 oz) banana ketchup
    1 cup low sodium soy sauce (Kikkoman)
    2 ea small onions, red (roughly chopped)
    1 head garlic (smashed)
    MAKE THE BASTE
    (made the day before)
    1 cup banana ketchup
    1/2 cup brown sugar
    1/2 cup water
    1/2 cup oil
    MAKE THE VINEGAR DIPPING SAUCE
    (made the day before)
    1 each onion red, small
    4 cloves garlic (smashed, and peeled)
    1 tsp chili flakes
    4 tbsp sugar, granulated
    1 cup apple cider vinegar
    (you may use your favorite vinegar)
    to taste black pepper
    to taste sea salt
    Note:
    -Grill over medium heat

    Probably the best recipe that’s is on the face of the earth! Amazing! I cooked this and my neighbours were knocking on the door! I had to share and they loved it! It has to be banana sauce or it’s just not like the real thing! 👍

      pwedeng pwede. and you can play around with the recipes to make it your own. feel free. i would say, under refrigeration at 40*F or under, it would be good for 3-4 days.

      I have the same question. I cannot find banana ketchup here. :-( I know banana ketchup is different (because that is what my Filipino Mom would use) and will make the BBQ chicken taste good but none to be found where I am. :-(

      You can fry pan at a very low heat, covered to trap the steam. Or you may also bake. Make sure that it is done with low heat because it has sugar and you do not want to burn it. Please let me know how your version turns out! :l

      this video. It says 5 lbs of chicken, but I didn't see 5 lbs of chicken in the vid. Also, I followed the recipe closely and it seems I have way more marinade in my bowl than you do in the vid. I know, I can always cut the recipe in half, but I just wish the recipe is exactly the way it is in the vid.

      @@Skeletonbody, I should have written "5 lbs of boneless and skinless chicken." It was 5-6 lbs with the skin bones and skin. I prefer the chickens submerged in the marinade. I will change the recipe now. I write these recipes from scratch and they are not perfectly measured. How did it come out when you made it?

      @@RyanBergunio It turned out great. I just have waaay more marinade and baste than I used. It tasted delicious as well. Thankfully, I poured the baste in a small bowl so I don't contaminate the rest of it.
      I made a 2nd batch today using only half of the recipe you provided in the description below and it was much better with the same amount of chicken I used. I'll be using the same baste next time.

      this is a good question. I was lucky to have banana catsup in my pantry but the "normal" catsup where I live is made from tomato.

      sugar is sweet but honey imparts a different kind of smokey sweetness. you have to give it a try for you to understand the difference.

      I do not think you can use coke as it will burn the meat when you put it on the grill. That is my guess. Let me know what you are going to do and share with us your version :) the key is to have fun. GOD bless us all.

    your vinegar dipping sauce has too much onion and garlic, need more vinegar and you need to use coconut vinegar, apple cider vinegar is too pungent and strong. you need to put real red chili not chili flakes, and you need to add a little soy sauce on the vinegar. vinegar dipping sauce is whacked

      yup too much garlic is a turnoff for non pinoys I guess you're going for the Pinoy taste. also liver and organs will not make pinoy cooking crossover oh well.
