- Sweet and Spicy Thai Chili Powder Cilantro Beef Jerky Marinade
Ingredients:
1 cup ABC brand Medium Sweet Soy Sauce
2 cups Mizkan brand, Mustard & Soy Sauce Salad Dressing
1 cups soy sauce
1/4 cup Worcestershire
1 1/2 cups water
2 tablespoons Thai chili powder
2 tablespoons Sambal or any brand of garlic chili sauce.
2 tablespoon chili flakes
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ginger powder
1/2 cup of super finely chopped cilantro.
Wash your cilantro by allowing it to soak in a large bowl of water. Agitate the cilantro with your hand to loosen any dirt or bugs that may be lurking within the cilantro. No need to dry the cilantro before chopping. Finely chop only the leaves and stems and discard the stalks.

Batch 1.
Marinate beef for 8 to 10 hours
Smoker temperature 170°
Cook time 2 hours in the smoker
Smoke level 5
At the 1 hour mark clear the smoke from the smoke chamber by pressing the Clear Smoke button, a 10 minute process. When the screen tells you smoke is cleared, open the door and rotate the racks from top to bottom and front to back.
Resume smoking. After 2 total hours in the smoker, remove the meat from the smoker and transfer it to your dehydrator trays. Dehydrate the meat at a temperature of 160° for 90 minutes. Rotate trays and flip the meat every 30 minutes.
Total smoker time: 2 hours
Total Dehydrator time 75 minutes
Batch 2.
Marinate beef for 8 to 10 hours
Smoker temperature 170°
Cook time 1 hour in the smoker
Smoke level 5
No rotating of the meat necessary while in the smoker.
After 1 hour in the smoker remove meat from the smoker and transfer to your dehydrator trays. Dehydrate the meat at a temperature of 160° for 1 hour and 45 minutes. Every 30 minutes rotate trays from top to bottom and flip the meat.
Smoker time 1 hour
Dehydrator time 1 hour 45 minutes
