The carbine is a Martini-Enfield Artillery carbine. I have one just like it and I shoot it all the time! It hasn't been converted as much as you think, though. The rifle was built as a Martini-Henry by Enfield, then was rebarreled and modified by Enfield to .303 British. The longer Martini-Henry, by the way, will be chambered in .577-.450 Martini-Henry.
Your longer one is the Mk. IV. Mks. I, II and III all had shorter levers but, this isn't a standard one, you've got a Carbine. I think there were 3 types of Carbine so, I'm not sure exactly which one you have but, it's one of the Carbines anyway.
I know you had the IC1 Cavalry Carbine, Mk. II Artillery Carbine and Mk. III Carbine. I believe there were more but they're the 3 I've heard of, I have basically no knowledge on these things.
