  • Pan Roasted Cod, Asparagus and Tomato
    1 lb. Cod, cut into 3 pieces
    1 lb. Asparagus, chopped
    1 C Cherry Tomatoes
    3 Garlic Cloves
    14 oz. Garbanzo Beans, rinsed and drained
    1 Lemon
    2 tbsp. Olive Oil
    ¼ tsp. Salt and Pepper
    Whole Wheat Bread
    Pre heat the oven to 425. Place the fish, vegetable and beans onto the baking sheet, drizzle with oil, season with s/p and squeeze half of the lemon on the top. Place in the oven for 12-15 minutes or until the fish is flakey to the touch. Toast some bread to serve on the side.
