To take this a little farther, you can carefully remove the balloons and slowly, carefully release the accumulated gas into a beaker. CO2 is relatively massive, so it settles into the beaker nicely. Have a similar beaker next to the one with the CO2 in it, and use a lighter, trying to keep it lit in the "empty" beaker (it stays lit), and then the CO2 filled beaker (it goes out). This also works for any CO2 producing experiments, like those using dry ice.
Does it matter what type of yeast I have? I don't have instant yeast, rather I have "active dry" yeast in a ziplock I got from my Mom. Not sure the difference, and how it relates to doing this experiment.
