The Most Underrated Squash | Twice Baked HONEYNUT SQUASH

  • This Twice Baked Honeynut Squash recipe is one you'll really have to try yourself! If you haven't tried Honeynut Squash yet which is a winter squash that is half the size of a Butternut Squash but much sweeter and delicate in texture, you need to do yourself a favor and find some now! When you roast Honeynut Squash, you get a creamy, velvety filling that mixes so well with all the ingredients in this dish to make a Twice Baked Honeynut Squash dinner. Perfect for the whole family!
    TWICE BAKED HONEYNUT SQUASH RECIPE+
    *Ingredients:
    4 Honeynut Squash
    Oil of Choice
    Pink Himalayan Salt
    Herbes de Provence
    Black Pepper
    1/2 Yellow Onion
    4 Cloves ofGarlic
    1 Large Carrot
    2 Stalks of Celery
    1/2 c Sliced Mushroom
    1 Medium Sweet Potato
    1 Medium Golden Potato
    1 pack of Impossible Meat (plantbased)
    1-2 tbsp Vegetarian Worcestershire Sauce
    1-2 tbsp Balsamic Vinegar
    1/2 c Kale
    1/2 tbsp Maple Sugar
    1/4 tsp Cinnamon
    Top with Breadcrumbs or Parm Cheese (Optional)
    1.) Clean and dry Honeynut Squash before cutting in halves. Remove pulp and seeds from core.
    2.) Pre-heat oven to 400 degrees F/ 200 degrees C and lightly oil baking pan.
    3.) Season squash face-up with Salt, Pepper and Herbes de Provence
    4.) Flip squash to face down onto oil before placing in the oven for 25 mins.
    5.) In the meantime- Begin browning the Impossible Meat in olive oil over medium-high heat. Add in the Onion, Carrots and Celery. Saute until fragrant.
    6.) Add in both diced potatoes, mix everything well and continue to cook on medium heat until potatoes become tender. Add in Mushroom and Garlic.
    7.) Season with Worcestershire Sauce, Balsamic Vinegar, Salt, Pepper and Herbs.
    8.) Cook for another 5 minutes and then turn off heat. Add in chopped kale and mix in.
    9.) Scoop out insides of roasted Honeynut Squash making sure to leave some on the bottom of the squash to keep form. Add the squash to your potato and meat mixture. Stir in well.
    10.) Add Maple Syrup and Cinnamon to mixture. Mix in well and begin adding mixture into the hallowed out squash.
    11.) Top with Breadcrumbs or Cheese of choice, then pop them back into the oven for about 10 minutes.
    12.) Serve and Enjoy :)
