How long does it take for such a big water container to empty out? Not going anywhere with corona and all, but would this work for being away for 3 weeks?

Thank you for the tips, however I must weigh in on your use of diapers. The super absorbent polymer, sodium polyacrylate, has all of the planet nastiness that plastic polymers pose with regard to microplastics in air, water and soil and non-biodegradability. And as far as YOUR safety goes, a quick search pulled up the following: "polyacrylate acts as a poison when consumed into the body and it absorbs even blood" Perhaps this tip deserves recalling.
Wish I could come up w a genius way to water my Greenstalk while I’m away. Unfortunately even their auto watering system won’t work due to the location of the Greenstalk which is far from a spigot.

You can also put a tray or anything that holds water underneath the pots,,its like self watering ,,i always do that for seedlings,,

It's not really. Look up the effects of microplastics on the environment.
Won't the water bottle just continuously drip and be empty after just a day?
Not if you thoroughly soak the area beforehand. Wet soil doesn't wick up water as fast
