I'd recommend getting the more powerful hand mixer, just so you have the option of mixing thicker consistencies (of ingredients) in the future. If you want to mix butter, the 300w will handle it with ease, whereas you may run the risk of increased wear and tear with the 100w mixer. If you only ever want to whip cream, the 300w will be less stressed than the 100w. The 300w hand mixer gets my vote! 💖😻

You can leave this whipped butter at room temperature for no more than 24 hours. If it's a particularly warm day, I wouldn't leave it out for much longer than 12 hours. It's really best stored in the fridge. Let me know if you make this and have a lovely weekend!! 💖🐈⬛😻
How long does it last in the fridge? Store-bought whipped butter lasts for several months, and it doesn't even spoil after that, it eventually gets moldy. Will this last that long, or will the milk make it spoil after a week or two?
I usually make a note of the best before date on the butter and then use my whipped butter up before this date. As this recipe doesn't include preservatives, it won't last as long as store bought. However, you could add whey to the mix and that will help the whipped butter last longer in the fridge! Hope that helps! 💖😻

Also unrelated, do you have any tips for using a dough hook in a stand mixer for bread? Mine is sort of S shaped and the dough just climbs up it and doesn't process at all!

Make sure your bowl is the right size (I have one that is slightly too big and just never works for dough!), and I repeatedly pull the dough down off of the hook through the mixing process. I’ve also found it seems to work better with higher hydration doughs, so maybe try adding in a Tbsp of water and make sure to mix on low speed! Let me know if that fixes things?
I'm Icelandic so technically not Scandinavian, but close enough and whipped butter is for sure a thing in the Nordic countries. It's pretty standard to get this with your bread basket at restaurants.
That's really strange, as all whipped butter recipes use a liquid - usually milk or water. Did you mix it with a stand mixer or an electric hand mixer? If you did it by hand, it will take **a lot** of mixing to incorporate! I hope you'll try this recipe again soon! I know others have had success with it!! 💗😻

I store my whipped butter in an airtight container in the fridge for as long as the best before date on the butter I used. Hope that helps! 💖😻

I lived in 2 Scandinavian countries over 10+ years, never seen it served anywhere.. Salted butter is a goto staple in the north.

Adding milk stopped it from incorporating. It just stayed wet not matter how long or fast we whipped the butter.

I followed the instructions, but few hours after I went to get it from the fridge and it was to hard to spread. Why?
It shouldn't be as hard to spread as normal butter, but leave it out of the fridge for a bit, and it'll soften 💖😻
