Omfg! ❤❤❤❤❤ I just made this! The taste and flavor combination is OUTSTANDING. It was a bit of work, but it is so tasty with the avocado and cilantro on top . The spice is just right and the walnuts are so good. The cheese sauce is so unique and the tomato sauce is really good with the lemon juice IMO. I’m so gladI made it and there are leftovers. ❤️❤️❤️❤️

We are in quarantine so I was missing some of the ingredients but it still worked out. I used pecans instead of walnuts. I used wheat tortillas instead of corn. It was too spicy for my younger kids. I think maybe I can just cut back on or cut out the cayenne next time. Also, it would be helpful to have the instructions to soak the cashews and cook the carrots & potatoes first. The finished recipe was really yummy! Thank you!
