    VEGETABLE BOUILLON
    3 ½ oz high quality salt (Redmond Real)
    2 T olive oil
    2 zucchini
    2 onions
    4 garlic cloves
    2 potatoes
    3 carrots
    3 celery sticks
    1 bunch parsley
    1. Rough chop vegetables
    2. Put olive oil in pot and cook covered until vegetables sweat down and get soft. Watch heat carefully so the vegetables don't scorch.
    3. Uncover, add salt
    4. Process in blender till smooth.
    5. Freeze in trays on parchment. Once frozen, slices into cubes. Break apart and store in plastic bag.
    6. 1 cube = 1 cup broth. Sometimes we add more for more flavor.

    *Notes - this makes A LOT of sauce. We freeze the extra and make a smaller ziti another night. Also, I reduce the white pepper to 1/4 t in the béchamel sauce or it is too spicy for us.

    2 t Italian seasoning
    1 ½ t black pepper
    ½ t fennel
    ½ t paprika
    1 t red pepper flakes
    1 T minced garlic
    1 T minced onion

      I got a Greenstalk for my birthday this year. They are pricey but I love it so far! Ordered from their website. I got the ones with shallower pockets so that I could have more pockets. The shorter planter is a cheap one from Amazon. It is cost effective but prone to growing gross stuff at the base - I’m not sure I’d recommend it but it is a great cheaper alternative.

    Do you have a video on making your garlic pucks?

      It was just a short. I just soaked in warm water to make peeling a little easier, then ground them in the food processor with a little olive oil. Used a cookie scoop to portion them and froze on parchment.

    Could your veggie paste be dehydrated and then powdered?

      Probably! I don’t have a dehydrator though so I’ve never tried it.
