It's called quick catching. So it's a way of catching Pokémon more quickly especially useful for days like community days and spotlight hours where the spawns are really dense.
The way to do it is to click and drag the Berry button up and hold it there while you throw with your other hand.
Or if you're left handed you can click drag the balls selection button upwards and throw with your left hand. Hope this helps
