That looks amazing! I love soups, all kinds. Here in southeast Louisiana I make a 12 qt pot of beef and vegetable soup early winter, and we eat our fill, then I freeze the rest in qt containers. Also gumbo, chicken rice soup. So satisfying.

Come visit Iloilo to taste the original Lapaz batchoy! :) My recommendations would be Popoy's (won the best batchoy competition here), Deco's or Ted's. :) Best batchoys usually can be found within the public markets.

What makes La Paz batchoy quite different tasting from ramen is the added shrimp paste, bone marrow, chicharon, and liver in Batchoy. Batchoy is an umami bomb. But ramen has better noodle texture and an infinite variety of regional variation. Both are wonderful.
