Damn, brings back old memories, we made everything from scratch, hell when I ran the saute station i had to handle all the pasta dishes, appetizers and the fry station, we were doing 450 a night for customers I master that station so good my boss ask me how would i like to try out the broiler station and be the expo which lead the line, within a month I master that station to, I had the best time in my life as being a chef, do I misses?? well yes if was younger do I misses now? no because I'm older now and the would take me out, that job is for the young ones those ticke just keep coming in even the bars orders and early birds orders, setting up a fruit and cheese boards, bravo, bravo to these young chefs.

So I've watched all your videos and I'm curious what happens in the section to the left of the kitchen. I assume that's where they add the garnishes to burgers but it looks like they do more than that?
