I have been veggie for 3 years and I have tried so many new foods and recipes and I feel so much healthier. You are going to love the change! Just a little note that fake meats can irritate some people's stomachs. I use brown lentils whenever a recipe calls for the use of mince, and are easy to substitute in more traditionally English recipes. I use chickpeas for any Indian recipes and red lentils with Thai / coconut recipes. I'm definitely going to make the cauliflower dish.

Loving the veggie life. Shepherds pie looked amazing. Just so you know, Wocester sauce has fish in it so isn't veggie so when you have used it all up think about purchasing ones with no fish oil. Easily available at supermarkets or amazon! Keep up the great videos :)
White cabbage works well in the gardener pie. I am the only one who likes cabbage in my household so I buy frozen cabbage and I added it to mine and yum. I just used red/green lentils instead of the quorn mince.

For those who doesn t digest/like garlic, I put it poached with the chopped onion to stir fry and then I take it off .:-) I use it beacause with legumes it makes the difference

Shepherds pie has only ever been made with beef mince where I live, I guess it’s down to people’s preference, there’s no right or wrong way. It’s always turned out good
Really enjoy these and everything looks wonderful and great ideas for me. One dinner I make, that is about 3 minutes effort, is to make a kind of lasagna using vegetarian chili layered alternately with thinly sliced polenta and shredded cheese. I can't claim this because I got the idea straight from Trader Joe's and I use their products which is why it is just a few minutes effort. Then you bake it until it's all bubbly. You, however, could use your homemade chili and I am sure that would be even better. You could make a double batch of chili and freeze half for later so you could make this quickly too.
Luke I'm so inspired. I'm a vegetarian and have really wanted to try new recipes. Always stick to the same old thing and feel my diet has really been lacking. Loving all your meals. Looks so easy and delicious. I'm off to Aldi tomorrow. Thank you, thank you, thank you xxxx
great video it all looked amazing! I am the biggest advocate for Quorn I love it! however it doesn't cook like normal meat mince. Please try, instead of adding it at the beginning like you would meat mince, add it at the end or when you add the liquid element. or if you are doing a dryer mince like the tacos just add some moisture, even if its just a splash of water. i will cook off and it is SOO much better. It needs some liquid to cook and it will absorb the flavor and be really moist with a better texture. :)
I cooked the bean chilli tonight, I didn't realise but the kidney beans I bought were in a chilli sause too x This was very tasty and had one heck of a kick. Thank you luke, will be trying more of your Aldi food recipes

Just cooked your 3 bean chilli luke minus the jar of chilli which i forgot. So i added half a green chilli. My whole family loved it and as you suggested.... ive got left overs for dinner with rice or wedges in 2 days time
Amendment to previous comment. I see your grater is the larger hole one. Garlic does better with the smaller hole grater. Guess I spoke out of turn but intention was to be helpful. I hate cleaning a garlic press myself. You do a fantastic job and I always enjoy!
Both my sons & their girlfriends are experimenting with going veggie too. So I’m deffo going to recommend the Jamie Oliver book to them - looks great. As does that cauli and chickpea curry! Great ideas in you vlog Luke, and also shows that while ready made sauces and spice mixes are useful, they not always necessary.
Yep you got it right, shepherds pie is made with lamb, hence it being called shepherd's pie and cottage pie is made with beef and veg due to cattle farmers traditionally living in small cottages. Great maels for the week, I forwarded your videos to my son who is moving out soon.

Just a heads up if you’re wanting to be completely vegetarian, Worcestershire sauce has anchovies in it. A good vegetarian substitute would be Henderson’s Relish or Geo Watkins mushroom ketchup, or even some miso or Marmite with a squeeze of lemon juice for the sharpness.

I made a Quorn chilli for tea and the other half said it's the best he's ever tasted. I'm not a huge chilli fan myself so not bad for first time cooking one ey. Definitely going to take your idea of using the rest in a taco shells though with some fresh salad 😋 thank yo Igor the ideas. That pastry pizza I have been making these for years....so good 👌
That was the best video i've seen in 2020! I started meal planning a couple of months ago. What a difference it makes to a family of four. I can spend around £70-80 in Aldi. Topped up with milk and maybe bread in the week. I think I could deffo get this lower but it usually includes fresh salmon, sea bass and smoked salmon so we are eating like kings. Foods deffo gone up since covid and my kids aren't at school so i'm assuming my shop will be less than £70 a week when its over.

Also, I don't use mixes for cottage pie, spag bol etc, but I always put lea and perrins in and a good dollop of marmite. Trust me, it adds so much flavour and if the sauce needs thickening, I use Aldis beef gravy granules rather than corn flour as they thicken and add flavour. Usually no need for further salt either.
I am such a fussy vegetarian but all of these recipes look so good so I can’t wait to try them! Please keep up with these videos - I am a new subscriber and look forward to watching more of your channel :)

Its the plain ling grain rice that's well known for been sticky and hard to fluff up. Great for kimbap! Basmati is like one of the easiest to cook.

Wash the rice before cooking to remove starch it will stop it becoming sticky. I do the rule of washing five times before cooking.

Try it in 'sausage' rolls as well. Makes a huge difference

Trust me, it adds so much flavour and if the sauce needs thickening, I use Aldis beef gravy granules rather than corn flour as they thicken and add flavour. Usually no need for further salt either.
