Best Nihari Recipe, "Simple"

Finally got around to taping my 90+ year old dad making Nihari.
When the extended family goes to Big bear mountain our first meal is always Nihari. When he used to send it to me in college all my roommates got "hooked" on it. He usually does not use a recipe, so it was interesting to see some of the short cuts he has adopted as he has gotten older.
Make sue to get good quality meat.
