I cannot believe that you made your hanpen from scratch this time. You absolutely amaze me! Datemaki has gotten so expensive. Almost $13.00 per roll! I love that you showed us an alternative to using hanpen (white fish cake)! Hanpen can be very hard to find in the US so making it from cod is very accessible. :)

Thank you for making this this video. It reminds me of my mom, who used to make most Osechi from 2-3 days before New Years Day. She made the Kuromame, Tazukuri, Kazunoko, and Namasu. She bought the KuriKinton and Datemaki. We had a feast, which was enjoyed by everyone who came over to our house.💟🙂
Reminds me of osechi prep with my grandmother. She thought it was very important that I learn how to prep osechi. My eldest aunt took over after my grandmother passed. We are trying to pass along some of the traditions to the next generation as well, but it gets harder and harder to do.
I love the little dried sardines :) stir fried until golden brown is delicious. great in everything! usually, you can find them in most Chinatowns/Asian marts

I fund a mix of rice crackers containing the small dried fish, I really liked it. It took me some time to get used to beans in a sweet form. I'm Polish so we eat beans in sauce with sausages or in have winter soup with potatoes and lard, or in barszcz. We never use them in desserts , so it was a bit weird concept for me. Still I like to try new dishes and keep open mind.
Amazing video Satoshi! I remember years ago when you were not as comfortable to carry a youtube video on your own. Now you're doing 20-30 minute "How-to Cook" videos, great work. This video reminds me to ask my Obaachan how to cook Osechi dishes.

In a pinch you can use tempura batter powder in place of corn starch since it's largely corn starch anyway. I've used it to thicken curry and it works fine.

I found osechi components online and will arrange them in my own box. I will have to make the carrot & daikon dish myself. And we will a Southern US soup instead of ozoni. It is made with green (kale) and black-eyed peas. Maybe I will add mochi cake to it? Hmmmm....
I love smell of yuzu, although I haven't been able to buy a fresh one. I have oolong tee with yuzu, in a Japanese bakery in Paris they make melonpan with yuzu cream, it's delicious.
I am cooking these this year~~ I am glad you showed an alternative way to make the datemaki, using a fresh piece of fish, because I cannot find the soft fluffy fish-cakes here in Canada (and, of course everything is more difficult this year because of Covid). I will try making the yellow colour for kuri-kinton using some tumeric powder!

Make sure it is soy black beans, not regular western beans. Big difference in taste.

Man, I WISH I could get yuzu. I've had several yuzu-flavored Japanese snacks and foods, and I really like the flavor. I'd love to try the real thing.
