    I would love to own one of these things because it would make my life a bit more efficient. I'm trying to dehydrate food to help two other families and its a task. Not to mention it doesn't reconstitute like freeze dried foods do. Accepting donations HAHA! Thanks for the video and the update.

    I was wondering who would be the first to make a video about this. I tried it on skittles and it worked great! Better than the test screen hack way of doing it since I was always inconsistent with my temps and times lol

    Phil just got our HR and this was the fourth run. They turned out great, thank you for the info and step by step. We did use the 145 but read while it was running in comments what you spoke of about the 135. Thx again

    We re-watch this video more than any other because of your explanations of the varied settings we can change on our machine. We've especially liked your suggestion to extend the drying time to 12 hours so we aren't interfering with sleep, work, and other scheduled events. QUESTION: Are there some types of foods that work better for the fast drying mode compared to the normal mode? Larger or smaller batches with fast drying mode? Would you ever consider a future video demonstrating how some of these varied settings affect the final product/drying time, etc.??? Thanks!

      The Non-Technical description is the Fast mode focus on appling all the heat as fast as it can to get the job done. The Normal mode focuses more on maintaining an optimal drying pressure applying heat as needed.
      The no technical answer is like driving a car. Fast keeps the pedal to the medal to get to the end destination as quickly as possible, the Normal is more cautious on arriving at the destination as safe as possible. Fast is great for soups or meats or other items where structure and collapsing are not a concern. Normal is best for sensitive foods where structure is important or dairy & fruits where preservation of nutrients from excessive heat is more of a concern.
      Fast mode is the standard drying cycle process. It is accomplished by allowing a bursts of heat to cause surges of sublimation followed by a resting period that allows the product to cool and rest prior to the next heat cycle. This process is best for products that have a strong structure such as meats, soups, liquid and candy where extreme heat processes are needed. etc
      Normal mode has a more constant heating process with a lower warming cycle range. It is good for products that have a tendency to collapse or products that you may want to dry at lower constant temperatures such as pineapple, leafy plants or dairy products. TMI?

      @@keithlawrenceCRC Not sure if you were directing your reply/question to me or to Phil. If you don't have the newest software, I suggest contacting Harvest Right. HR emailed us the updated file which we saved to a flash drive and then downloaded on our machine. (They include instructions.) Also, Phil has a video from a year ago about doing a download to your machine. Hope this helps!

    Skittles are easy to freeze dried so a lot of people are doing it. There are a lot of competition. However, there are not many UA-camrs explaining how to freeze dried another candies. They may use the candy mode and dry for 2 hours and tell you they are done but they are not. I hope there will be more people come out to share with us to get get different candies done right, not just taffy and skittles

    I checked my FD, that was delivered in Dec. 2021, and 5.0.19 was already on it. Has anyone noticed shorter fd times with the new version?

      Mine was nov 21 and it had the old software. 5.0.16

      Sounds like you got lucky somehow. I just got mine back from repair in April where they updated the software along with the repair and mine was only taken to 5.0.16

    16:00 wait! You tasted the Skittles? How did you take the candy out without turning off the machine? Will it damage the machine with you open the valve and turn the pump on and off? Just wondering.

      Nope, it's called pausing the cycle. The same procedure is used at the end of the freeze drier cycle.

      Thank you Phil. I am still trying to figure out how to freeze dry gummy candies and hard candies like gummy bears, gummy worms. The hard candies didnt explode, instead they are sticky on the outside, outer layer is crunchy but inside is still tense and hard

      I called Harvest Right about my machine today and also if it is ok to pause the cycle. The tech support guy said he wouldn't recommend that. He said that will damage the pump. You can do that at the end but not during the cycle. I don't know. Maybe you are doing something different? And on the candy, he doesn't have an answer either. But drying for 12 hours to get the gummy bears puff up, is not what other UA-camrs claims only take 2 to 3 hours 🙄.

      @@mydarlingisa Whatever you do, the first step is to heat the item until almost liquid and then apply a vacuum.

      @@mydarlingisa When dealing with candy, the first step is to heat it until soft or almost liquid and then apply a vacuum to "boil" the material. It's easier to play around with candy using your oven and the vacuum mode.

    Phil, can you elaborate at all on yhe workings of fast mode and when it's appropriate to use? I'm a little nervous to upgrade to 19, as when I upgraded to 18 it pushed my machine into SSR mode and it took a new relay board AND a new USB board to get it all working properly again. I REALLY want that shortened freeze time though! Thanks for all your informative videos!

      I was happy with 5.X.16. I wasn't happy with the following updates until 5.X.17. I didn't have any problems. Many people did. So far I like 5.X.19. It has only been out for a week. Fast mode turns the heaters on and off X seconds per minutes. During normal mode the heat is always on, but at a lower rate. I should make a video on this.

    Phil- I love your vids. Why does it have to go through “cooling vacuum chamber” stage when, with candy, we are trying to get them to a high temp before the drying process? It seems like it should be warming the chamber first??

      As far as I know, candy has very little moisture, if any. The cooling stage may cover something that may have moisture.

    Have you upgraded to 5.X.23 yet? HR says .18 and .19 are buggy and lots of people are reporting machine damage with .19?

    I’m still new to FDing. Freezer space is limited so would extra freeze time help with liquid trays? In theory, preventing the liquid explosions f things such as mixed, raw eggs or milk that weren’t pre frozen? Thank you for your channel! Your content has been exceptionally helpful! So far I adore our Harvest Right! Now every shopping trip has me asking can we FD that?

      Extra freeze time is tricky. I would use extra freeze time with foods high in fats and salts that may not freeze as fast or if you're having inadequate vacuum issues.

      @@Philat4800feet I’m trying a round tonight of cooled, homemade chicken bone broth at -20, extra 4 hrs freeze time. I’d rather know now than later if I can successfully FD non pre-prefrozen liquids now without explosions. I plan on still hard freezing mixed farm fresh eggs.

    Candy mode works at 135, I've done several loads of chocolate caramels and it worked the same as anything I did 145/150.

      The only issue I've noticed so far is when I hit cancel to check a load once the screen said if not done hit more dry time but there was no button for more dry time. Now I just turn off the pump to check anything.
      *I just went back and checked and your screen said the same thing @ **18:49*

      Yup. You are correct. The information I got from the HR techs was incorrect. However, the greater the heat, the better the sugar crystallization.

    I don't understand why there is the initial freeze 15 minute wait time, when the point of candy mode is to heat and then dry? What is the purpose of that happening?

      Most likely ease of programing. There could be some candy with a little moisture. Can't think of any.

      I’m new to this but is the point of the initial freeze meant to protect the vacuum pump from any moisture that may be in the air or in the candy? I heard that if moisture gets into the pump it can ruin the pump. If this is right then the quicker “oven” to vacuum method is risky to the pump. I’m thinking this is why HR added the candy cycle, to give a faster option while protecting the pumps from any moisture that may be in there.

    Phil at 4800 feet...I just found your channel and I just purchased a Harvest Right Freeze Dryer. I am having fun trying all types of foods including lots of candy. Your explanation is very good regarding the candy mode. Thank you! I particularly enjoy freeze dried Milk Duds. Would you still recommend that much heat for those since they are chocolate covered?

      Chocolate responds differently than foods with higher sugar content. You can turn down the heat and increase the time. Experimentation is the key, along with your altitude where you live. Soon you will be hooked on freeze drying.

    Love your channel Phil. Thank you very much. I updated the software and after watching your video many times started my first batch of skittles using your settings. QUESTION: my screen doesn't show that "candy mode" is on or give the option to warm the trays. I also never saw the high temp on/off toggle. Called HR support, (they answered promptly!) and John Tanyag of Tech Support sent me an email with an update to v.21. I'm scared to use it because of other users horrof stories with new versions, and wanted to check with you first if you had any tips in case others may also see the same issues!

      Thank you Phil. I updated to version 21 and it all went smoothly!
      Everything now looks like your menu from ver 21 EXCEPT they added back the freeze dryer name while cooling the vac chamber and on the load tray screen as well. Works perfectly. I did chocolates: Rolo, Peppermint Patties and Snickers, so warmed the trays only 3 min. (until the chocolate was glistening.) When the DRYING began and the pump started they immediately started to break open. Wow.
      Hang in there! Always appreciate your posts.
      A thinking mind like yours is a rare thing these days. Thankful we have YOU :-)

    Skittles are a breeze using the candy cycle - However, I then proceeded to try peach rings using the candy cycle - not a good experience. Question: Have you or anyone else tried/had success with Peach rings using the candy cycle?

    I'm a bit confused, why did you continue the 2 hour cycle if the skittles were all crunchy at 30 minuets? If there was no change then I don't get why you wasted the extra time and energy?

    Question about long term storage. Do we add an oxygen absorber to the mylar bag on skittles? Since it's basically all sugar I am wondering if it causes it to harden to an inedible point over time....since we don't eliminate oxygen when we store regular sugar. Not a science mind here---so just wanted to double check so I don't spoil a bunch of skittles.

      I haven't tried to pack them the "normal" way. I have some in a zip-lock bag from last year. Still crunchy. However, items with lots of sugar become hygroscopic, and will attempt to absorb moisture.

      There is a rocker switch on the rear of the Standard and Premium vacuum pumps. Are talking about the same thing?

      Hello I have kind of the same question. I have a premier pump GEN 1 and I don’t see a power switch but I do have an open and close knob on the top of the pump. Is that what you mean by turn off the power, meaning turm the knob to “C” to close the pump?

    Hello Phil, Thanks for another awesome video =) I received the HR email as well but I was a bit thrown by the "No support will be available to revert back to a previous version." Does that mean if we upgrade but then dislike it or have some issues we won't be able to go back to a previous version, HR just won't help you get back to a previous version but you can do it on your own, or something entirely different? Curious if you knew. Either way, thanks again =)

      Hey Phil great work. This is what I have learned so far and I'll keep it as short as possible. Had 5.1.16; medium, flawless for over a year. Upgraded to 5.1.19 and total disaster, vacuum errors, etc. Called HR and long story but they emailed me four (4) files: ClearFDr.txt, Drain.txt, ForceUp.txt, H0501016H.hfw The text files can't have any other numbers, characters in file name. Put these 4 files on a clean jump and turn on FD. The FD started loading and it started acting like it was in a loading loop but I just let it run and finally it screened up 5.1.16 I feel confident this load will go through without a hitch. I liked the features of 19 but if my FD is going to error on EVERY batch I'm losing too much time but now I know I can go back and forth with upgrades.

    I so appreciate this video. I'm brand new to the Harvest Right and couldn't figure out how to start the process with pre-frozen food. Every video I see shows to push the "frozen" option. Mine doesn't have that and I couldn't figure out how to shorten my process time. Thank you so much. Subscribing to your channel to learn more. On a side note, I've also seen videos with the "liquid" option. I don't have that option either. Is there a tip or trick for that?

      Sound like software version 16. Harvest Right has come a long way. Currently versions 20 and above make freeze drying almost automatic.

      Candy is going to be hydroscopic. Glass jars would be better than bags since the walls of a jar won't force the candy together like a bag if a natural vacuum develops inside.

    Appreciate all your info! Our machine arrived yesterday so we're rookies. We live at 6000 ft. What adaptations do we need to do for prebaking candy prior to freeze drying it? [Not our main focus since we bought our freeze dryer for food storage and economic use of foods on sale - but we do like to spoil our grandkids with some fun treats.] Any other videos or data we should study for adaptations for our altitude? Thanks!

      My suggestion...don't over sample the candy. Have fun and try different candy. Try candy that will go soft when heated: Salt water taffy, skittles, gummy bears, bit-o-honey, etc.

      @@Philat4800feet Many thanks for your input. Your lean manufacturing outlook that you demonstrate so well in your videos has been of great value. These practices closely align with our work habits and have expanded our understanding of the many ways we can efficiently use our machine.
      We mostly stay away from candy but did a trial with a Big Hunk candy bar cut into pieces. At our 6000' elevation, we baked the pieces for 10 min at 170 F then ran the vacuum pump for 15 min. We want to control puffiness in any candy so did the trial the same way you did by removing the shelf unit and placing our pan in the bottom of the chamber.
      They turned out pretty well but with just a slight hint of chewiness. Being still fairly new at this, we're not certain which variable to adjust: try 12 minutes (instead of 10) in the oven or extend the vacuum time?
      And although we'll experiment with candy from time to time, it can't even begin to compare with the tree-ripened Red Haven peaches we freeze-dried last week. We gently washed the skins and left them on the slices. Just sayin' - we'll choose these peaches over candy anytime. Cheers!

    Have had my FD for about 8 months. When I heard about upgrade I called HR and asked. Was told didn’t need the upgrade. When I do candy though still goes thru freezing mode, so not quick at all. I am acomputer illiterate. Thoughts?

    I recently upgraded my larger freeze dryer’s software to 5.x.19 from 4.1.7 and have had nothing but problems. The loads take twice as long to dry now. I prefreeze everything and it still goes through 14+ hours of freezing where it used to take maybe four hours….Even at -10 the pump still doesn’t kick on- not until it is closer to -25. And while the touchscreen works perfectly at every other time, once the load is complete, the touchscreen stops working. I have to turn the machine off and then back on again for my touchscreen to work again. And of course there are fewer options for the user to control. Has anyone else experienced these problems after an update? If so, have you been able to resolve them? How? Thanks much

      I have not seen this problem. I would update to 5.1.23 and move your settings to 0 freeze point, 0 extra time.

    I am running the .18 version which the FD came with when purchased about a month ago. I am trying to find out how to customize for candy setting so I won't have to download the update to .19. Can the settings you used on the video of Initial freeze of 0 F, extra freeze of 0.00, dry temp of 145F and warm trays for 20 minutes be used on any software version to do candy successfully?

      Have you tried re-downloading 18 again from the HR website? You can try doing my skittles method. It may need to be adjusted a bit. Not all ovens are the same temp.

    How does it work with a full machine worth. that's about a quarter of a tray worth so not really a real assessment of true time required.

      FD Candy making comes down to two issues: heat and vacuum.
      1- Heat is needed to soften or liquefy the sugars. You're correct, the more candy, the more heat will be absorbed.
      2- Vacuum is used to boil or crystalize the sugars. In some cases the vacuum will assist in pulling the candy apart if there are air pockets inside the candy at current atmospheric pressures. Quantity really doesn't effect vacuum.
      Candy has little, if any, water. Therefor you really can't freeze dry it based on sublimation, so freezing the candy is counter productive. At my oven temperature at my elevation, I can do skittles in my oven at 190 degrees and placing them in the FD on vacuum mode in eight minutes.
      Full trays of skittles will take a few minutes more. Too full and they will stick together. This is a great activity to do with children- to see what will "freeze dry".

    So, If I had a way to heat my skittles to 145F and then place them under a vacuum - could I skip the candy mode (I have an older machine that can't be updated) I have a way to heat the skittles to 145F - my question is - how long do I need to heat them before I put them under a vacuum? thanks

    I turned off freeze mode just like you did. I did everything you have done and my batches are freeze dried and frozen. How do I make it stop freezing, I lose my batch when the skittle and peeps freeze. Im so fed up with this machine.

      Are you able to be there at the end of the batch? Are the trays getting too cold because the heat for the shelves is turning off? Try adjusting Extra Dry Time to 12 hours to keep your candy warm until you get to it. Is this helpful?

      Thank you! Also, once your candy has been in candy mode for 5 mins or more, do you notice your temperature dropping? Is that normal? My temperature is currently in candy mode at 150, but the machine says 100F and just dropped again to 98.?

    Can’t the machines be damaged by opening the valve and turning the pump off mid process?

      I don't believe so, and I can't image what could be damaged. It's a process that requires to be performed at the end of every cycle. There are some issues to remember. The drain hose can't be in water and the valve should be opened for a second or two before turning off the pump.

    Didn’t want to look thru the comments to see if this was already asked BUT at the end of your candy cycle it says “ if needed, select more dry time” did you notice there’s no button for that anymore?

      Yup, they do have a button to start a new candy cycle. Two hours should be plenty of time. I tested the skittles at 30 minutes and they were crunchy.

    Phil, please answer/confirm this for me. When I downloaded the 3 files to upgrade from v5.1.16 to v5.1.19 they were zipped. I opened/unzipped them with windows explorer and the copied them to my 16gb memory stick thumb drive. I turned FD power off, inserted the thumb drive and turned on power. When the screen came on it showed v5.1.19 and I successfully made candy. I chose no defrost. Cleaned my fd and rack with 70& alcohol. Since then I've been getting errors I've never seen before and have spent the last 38 hours trying to get through a 2 tray egg run with 2 trays of beef stroganoff. My machine keeps coming out of dry mode after taking 10 hours to get there and telling me more freeze time is needed. I prefreeze everything at least 24 hrs. Your thoughts?

      If you pre-freeze your food I would set the freezing set point to -0 degrees, extra freeze time to 0:00, and the Drying Mode to fast. The new programs from 0.X.17 and up, will not allow any pre-sublimation before turning on the vacuum pump. The extra freeze time is trying to make sure your food is rock hard.

    Candy mode is great but I've found gummy sweets tend to expand at the bottom where they're under direct heat and not at the top. Causing them to balloon at the bottom. However a full run they come out perfectly but takes 12 hours. Is there a solution to this using candy mode? I've not found one yet.

      Try putting them in an oven at 145 degrees and then applying a vacuum on them

    After I load my trays after the 15 minute window, it goes into freezing mode for hours, but yours says warm trays. How did you bypass that freezing section?

      That may be up to the program, if the program is sensing any water in the chamber, hose, or shelving unit. If there is any sublimation, it will remain in freezing mode. Try this video out:

      At the final screen the center button allows you to start a new cycle without the 15 minutes or defrost.

    A few questions
    1. Can you do mini marshmallows on candy mode?
    2. How do you use the vacuum setting?
    3. I did the jolly rancher candies and Candy mode and they came out all different sizes. I'm not sure how to do the vacuum part but we ran jolly ranchers on Candy mode and some of them were huge and the other ones were small. Do you know what I might have done that went wrong?
    I absolutely love your channel thank you for all the videos that you put out

      The candies I've had the best success with are: Skittle, saltwater taffy, Bit-o-honey, gummy bears/worms, etc., Marshmallows will expand and often collapse. Look for candy that when heated will soften but not melt. I haven't tried Jolly Ranchers, but Big Hunk may work. Revert to your childhood. Find a candy store and go wild.
      If you're using the Candy Mode, don't worry about the vacuum setting. If your going to experiment with vacuum, touch the leaf icon.

      I had very mixed results with Jolly Ranchers. Top two trays blow up pretty good. Bottom two trays are almost unchanged.

      I am also struggling with candies too! I actually freeze dried my gummy bears twice to get them blow bigger. For the jolly rancher, they are much easier. Weird that i have no luck with the candy mode setting but if i use long normal setting, they candies loom good. And just my last couple runs, only the middle on the trays looked good. Those on the ends were small... i am so frustrated

    I’ve tried downloading the files on my flash drive and clearing the entire flash drive ahead of time so it’s the only files on the flash drive and yet still when my machine turns on it doesn’t acknowledge the updated. Do you know what I could do to Successfully update

      HR recommends using a very small memory jump drive. I use an old 128MB. Try a different jump drive.

      @@Philat4800feet so i got the patch, my XL is at least turning the heat on when the vacuum comes on now, but in candy mode it cant hold the 145-150 temps i need, it goes to about 135-140 then drops down to around 100 then rises up and drops it repeats this over and over.     I have version 19 I have set it the way you showed, but it doesn't give the the option to switch to candy mode after the initial 15 minutes cool time. It begins freezing rather than heating. Any ideas?

    I just don't understand. I did this with your settings. At 2 hours the skittles, taffy and gummy peach rings still looked the same. At 3 hours they puffed up but were chewy in the middle. I will keep increasing time and testing it but I wonder why it isn't A quick as yours.

      I can understand being cautious about upgrading. The last several software upgrade were to reduce vacuum errors. If your machines are running fine why upgrade. As a Beta tester I had my share of problems with bugs contained in the software, But they were address and everything is running fine.

      ​@@Philat4800feet Yeah. I'm not knocking those who do upgrade. I'm just personally superstitious about it. Because I had a printer that I also upgraded the software, and they made it so you could no longer use the "generic" cheaper brand ink cartridges, and were then forced to buy their own label (more expensive). All due to a software upgrade.
      So, sometimes, upgrades can have negative results, and eliminate certain functions that used to be available. That's why I'm cautious. And the older version I have right now (on Harvest Right), hasn't given me any problems. I also don't eat candy, so no need for me.
