    Pierogi
    The Dough--
    3 1/4 C flour
    2 eggs slightly beaten
    1 tsp baking powder
    1/4 tsp salt
    1/2 pint or more sour cream
    Mix all ingredient to make a soft dough. (If using a mixer, mix until it pulls away from the sides of the mixer bowl.
    Roll thin and cut out 4 inch circles.
    Fill with a spoonful of filling.
    Fold over and pinch together, making sure you pinch the edges shut totally with fingers or a fork.
    Drop into boiling lightly salted water and and cook until they puff and float, roughly 3-4 minutes.
    Remove and drain. You can freeze them, throw them in a crockpot with a pound a butter and several sliced onions, or lightly fry in butter in onions to serve right away. Yummy with a dollop of sour cream!
    POTATO & CHEESE FILLING
    1 tb grated onion
    1 tbs butter
    2 C mashed potato
    1 C grated cheddar or other cheese
    salt and pepper to taste
    Boil potatoes and mash with cheese. Sauté onions in butter and all to the potatoes and mix together well. Ready to fill.
    SAUERKRAUT FILLING
    1 tbs sbutter
    1 cup chopped onion
    1 cup chopped mushrooms
    14 ounces sauerkraut - drained, rinsed and minced
    ¼ teaspoon salt
    ¼ teaspoon ground black pepper
    Optional--1 tbs sour cream
    Chop kraut, onion and mushrooms and sauté in butter.
    Mix all together for your filling.

    Yeeeees!!!! Hooray! Polish Heaven indeed! My mom used to use the farmer's cheese for the filling with the potatoes. Outstanding job they look so delicious! You made my day Helga!     Give me a spoon and some of the potatoes to tide me over until the pierogi are ready. No bacon? No sour cream? No pickled beet and horseradish relish? Been a while since i tried making them.       LOL, lots of bacon and sour cream goes into the pierogi casserole. I love my pierogi with a dollop of sour cream or applesauce. We do red beets, red beet eggs, red beet horseradish and horseradish with our ham, pot pie and other goodies, LOL. Thanks for watching, Sean!

    So glad I found your channel from the Crocktober playlist! Landed on the golumbky vid and now this pierogy vid. I grew up in Western PA in a coal mining area and both parents were Polish. These were my mom's best recipes. With winter coming up, will need to spend a couple of days making both recipes (my husband grinned ear to ear hearing this). Thanks for bringing back great memories!

    Yum! Homemade pierogies are the best. My Polish gramma used to put a little oil on her hands and slather those little dough pockets a bit before freezing. She said it stopped them from sticking together.

    My hubby is Ukrainian and we both love these. It is a lot of work to have a Ukrainian meal but worth it. He boils them. Until they float and then frys them.He frys onions and polish sausage. We top it with sour cream.we can eat this for any meal.

    Nice recipe. I'm gonna try doing the dough with the sour cream. I've also never done sauerkraut with onions and mushrooms. I'm gonna give that a try. Thanks for sharing.

    Your so awesome at everything you do. Some people would just see a recipe but something like that is a memory. I still smell my grandmas cornbread sometimes..shut my eyes breath deep and go back.     We always used a fork to seal the edges. And ours were twice the size your making. We fry yhem in butter and eat. Brings back alot of memories

      If you ever had the fresh Lima beans there they very well may have came from my mom & dads farm. They sold them to Cox's, shelled by the quart when they were in season.

      That is awesome! I simply didn't have that kinda time but should take a day to do it, maybe after the new year. The last quarter of the year is always really bad at work with OT, so it's a challenge to get out all the holiday stuff I want to.

    I just found you and am so so happy . Now I can surprise my husband from Pa with food he grew up on . I grew up and army brat I do cook German food but its so different then Pa Dutch/amish cooking .

    Thank you for sharing the recipe. I grew up in the Mon Valley with Polish relatives. Pierogi and cabbage rolls were staples in my grandma's kitchen. Now I live on the west coast and it is so hard to find Eastern European food, not along Polish food. I've never made pierogi, but I think I'll give it a try after watching your video.

    Thanks for sharing! I’m from south-central Pa. My husbands Mother always made pierogies at Easter and Christmas. She also made them with cooked prunes! You should try them. Absolutely delish! 1 whole prune in each one. Merry Christmas!

    Huuuuuurrrrrrrting me! I went to Falling Waters PA thinking surely I’d find some there, willing to break my strict keto in the first couple months. Couldn’t find any. Then I found some keto noodle dough flour and tried making them from scratch with cabbage and ham, but they were only so so. I will probably have to break down and make the real deal potato and cheddar with real wheat flour sometime this winter. Felt that “so good!” part of your taste test.

      Yes, it's hard to replicate with other materials. I tried when I did low carb years ago, used mashed cauliflower inside and bean flour for the pasta. It was ok, but definately NOT the real deal, LOL!

      Typically, they will brush them with oil and then freeze so they don't stick but she may have used butter, too. Sounds good to me, LOL!

      Absolutely! I make plain mashed taters (no butter or milk) and add drained cottage cheese with some chives for filling.

      Typically, I add onions, 2 lb butter, roughly 48 pierogis (that fills a 5 qt crockpot) and put them on high 3 hrs. after mainly done, i put them on warm for a buffet, like when we have them Christmas Eve.

    I love pierogis. And from the way you just made them, it doesn't seem that hard to make them. But I have a question. I've had them with potatoes and cheese and with saurkraut. But how would you make them with prunes. My uncle used to make them with prunes, cottage cheese and potatoes and cheese. He used to use farmer's cheese (goat cheese). Do you have any suggestions. Great video.

      Ask and ye shall receive! here is the prune recipe for you.
      Prune Pierogi Filling
      Ingredients
      20 prunes, with pits
      1 tablespoon sugar
      1 teaspoon lemon juice
      1 stick cinnamon
      1/2 teaspoon cloves, ground
      Directions
      Gather the ingredients.
      Place whole prunes in a medium saucepan, cover with water one inch above the prunes.
      Bring to a boil, add sugar, lemon juice, cinnamon, and cloves.
      Cover and turn off the heat. Let steep for 15 minutes.
      When cool enough to handle, drain, discard the cinnamon stick and remove pits from prunes.
      Let cool completely.
      Refrigerate until ready to use. as your filling.

      Plus if you brown the onion& garlic w bacon grease add this along w cheddar to sweet potato you wont believe how scrumptious this end product is. Yw

    Biggest Tip: Let your potatoes cool completely before making the pierogi. This will give you firm potatoes to work with. You don't want them runny.

    Helga I am originally from Pa now live in southern Delaware. I can’t find any good Kielbasa interested in fresh and smoked. Are there any online polish butchers who ship? Can anyone help me out. Thanks

      Down your way, the best I could find was in Wilmington. www.delawareprovisioncoinc.com/delaware-provision-co/ They opened one in Millville also--www.delawareprovisioncoinc.com/press/ The other place down that way is Hickman's www.hickmansmeats.com/meat in Rehoboth Beach. From here, www.kielbasy.net/ They have some of the best Kielbasa on the east coast and i believe they ship. Pronounced kov-a-lon-icks. Let me know how you make out if these don't pan out for some reason.

      Yes, but only after they've been frozen. You can't fresh ones. If frozen, make sure oil is 350F and drop for roughly 4 minutes, or until they are golden and floating.

      LOL, your name is swiss german, and was mid high German for goat herds. My father's mother was from Interlaken Switzerland. A lot of the eastern european foods overlap like this and we definately inherit the love of them! Thank you!

    Why doesn’t anybody know how to pronounce the word pierogies. I can’t explain how to properly say it. It has distinct way it is pronounced correctly. And yes i’am polish. We have been making these and homemade polish sausage for the last 74 years i have been alive. I grew up learning how to make these as well eating this kind of food every other week my entire life.

      Actually, I do. However, this whole region, settled by Polish, Lithuanian, Ukrainian, and eastern European peoples all say it a bit differently. It just depends on which side of the mountain you grew up on here in the Coal Region. How wonderful to have such a legacy! I grew up eating this all my life as well, and we used to make all our own kielbasa and sausages when we still had the farm. Does your family have their own sausage recipe like so many others here do?

      Since you’re Polish, you should already know it’s not pierogies- it’s pierogi
