  • Hello everyone, it's me again from "Itadakimasu Recipe," the UA-cam channel about Japanese home cooking. Today, I'll introduce you to Mozuku Vinegar. During this summer, I visited the Yaeyama Islands and brought back some freshly harvested Mozuku seaweed from Kohama Island as a souvenir. I'll use it to make delicious Mozuku Vinegar! In the video, you can also enjoy the soothing sound of waves and traditional Okinawan music. So sit back, relax, and enjoy today's episode. :)

    ★Ingredients:
    Mozuku seaweed - a suitable amount
    3 parts Men-tsuyu (noodle dipping sauce) : 1 part vinegar

    ★Instructions:
    First, I need to remove the excess salt from the mozuku seaweed. Rinse the mozuku thoroughly and soak it in water to remove the salt. Drain the water from the salted mozuku. For the dressing, the ratio is 3 parts mentsuyu to 1 part vinegar. Feel free to add your preferred toppings such as grated ginger, tomato, cucumber, shiso leaves, or okra for extra flavor.

    What a wonderful holiday! I am envious 😊 I have tried the premade mozuku from the shops (sold in tiny 1/2 ounce containers) but I haven’t seen packages of it. I enjoy vinegar a lot so I will see if I can find it online.
    By the way, my daughter raises quail and she gave me a few dozen quail eggs this week. I made your soy sauce eggs with them! They were delicious 😋

      Mozuku vinegar is often sold in small packages, right? It's surprising to know that it's also available in the United States! And you made soy sauce eggs with quail eggs!!
