I love strawberries! Even if they aren't in season, this recipe can be made with frozen strawberries for a delicious dessert. Because the recipe makes two loaves, you can even share the extra! You can find this recipe on page 33 in my Volume 2 cookbook.

I use the same recipe but mix all ingredients together in one bowl. I don’t mash frozen strawberries. Just be sure liquid is about 1/3 cup. I don’t use a glaze. It’s delicious!

I would probably make the whole thing in the food processor. That's how I always make my banana bread--no mashing bananas or chopping nuts! Half the recipe would be a gracious plenty for us!
