    That’s my favorite too on the WSM and usually 5 hours is perfect for St. Louis style rib.

      Thank you! And yeah, there are 2! They wait by the grill from the time I light it up to the time the colas cool off

      @@HanksBackyardBBQ Wondering why the hinge is to the side rather than opposite the lid's front handle. I ask because I had to laugh at myself last week when I installed mine. I almost did the exact same thing because the instructions say to install the hinge over a leg to support the weight of the open lid. I sat there for five minutes agonizing whether I should follow the instructions or put it on the back seam before I realized I could install it on the seam and rotate the body so the seam is in line with a leg. Five minutes of agony followed by ten minutes of laughing at myself. Either way, it works. Just wondering if you had the same hiccup with the install or you had a better reasoning.

      @@51stparedoctober4 to be honest, I didn’t even pay attention when I installed it 😂

    Did you use water in the water bowl or wrap it in aluminum foil ?

    Do you know what the internal temp of the ribs were when you took them off?

    • @HanksBackyardBBQ
      @HanksBackyardBBQ  2 роки тому

      Thank you for the great question, I do not, I just followed the 3-2-1 method with these from what I can remember. If I had to guess internal temp, I would say 200-205.
