As someone who comes from the land of the quesadilla, I can say that looks pretty damn good! FYI, when mixing the dough in traditional tortilla making, lard or some other fat is included. Otherwise it's pretty spot on!

The land of the quesadilla?? You mean The Middle East? thousand years before mexicans knew that cheese existed the "quesadilla" was made in the ancient civilizations of the middle east. All the tacos, burritos, quesadillas, etc. all of that was introduced by arabs and cheese itself was introduced by Spain n the 1500s. Mexicans have stolen even the name of a spanish iconic cheese, the Manchego Cheese...

Kaymac (kajmak) is something between clotted cream cheese and butter. Common in Balkan and very, very tasty.
