I love how Celine hangs on your explanations like they are completely novel to her, but she must have heard you rant a dozen times on the exact subject before. Perfect together.
About the problem of landslides and erosion: I can recommend the documentary 看見台灣 - Taiwan from Above. It illustrates the issue very well, and from that perspective, I think the Taiwanese government made a fair choice of making a shift on what's happening on these mountains.
Our friends from Taiwan sent us some high mountain oolong as a gift, and it was amazing to try for the first time. I didn't realize how much labor and love went into producing it! Thanks for your video, as it added to my appreciation of the tea. :)
Ah, at last... Hair cuts! Must be equally as refreshing as high mountain oolong and might I say in perfect timing with this video 😂 You both look great. But really, I've been wondering why you guys haven't stocked any high mountain and now I'm so glad you've found the one!
It's so nice to drink along with you and find similar notes. I'm drinking a TW HM Oolong I bought back from Singapore. I have no further details other than it being HM... I had only previously tried it in their shop, and now I am brewing it at home for the first time. I definitely concur with your tasting notes, like a fresh mountain dew, I sort of inhale that freshness as I drink it. Aftertaste was distinctly mango for me, with notes of a ripe pineapple. Aroma was a citrus and grassy with that wonderful body of butter! Once I am back in the UK I will make a special trip to visit your shop for a good tasting session!
Is this really the first "Qing Xin" from Mei Leaf? I thought that the cultivar "Chin Xin" from Frozen Summit and Amber Gaba was just a different way to write the Chinese name for "Qing Xin".
I just ordered the alishan creme from Mei Leaf company and I can’t wait to try it!!! I’m so excited and it’s my first time ordering any tea from London. I’m sure I will love it and then become a repeat customer❤️
@@adriannealvord9023 That's Awesome! Alishan cream is my favorite green oolong at the moment. I have yet to any of Mei leaf's TGY's so maybe that will change soon lol. Enjoy that delicious tea!
Hello there! I wonder whether there will be a video about tasting/smelling and what affects it in negative/positive ways. What kind of bad behaviours might affect palate temporarily or either permanently? For example burning the tongue with hot tea surely won't help tasting it. Sometimes the tea just tastes flat even with the same brewing conditions in the same drinking environment.
First steep seems closer to 55 seconds than 30 seconds. Second steep seems close to 45 seconds. Third steep seems even shorter at around 30 seconds. 4th steep is at around 55 seconds. I guess this tea is more tolerant of steep time variation? Or is it possible first steep was actually over brewed, and he went down twice. Third steep was under brewed, so he went a bit higher on the fourth?
TeaBro in my opinion, oolongs can definitely be brewed longer at first as it requires a lot of energy to fully absorb into the leaf. Also remember its not a perfect science with timing, to all about listening to the tea as you brew. First steep too strong, ease back a bit next time, etc.
@@Geeoorrgeee thanks for the response. I agree that first steep can be longer, and dependent on how long the wash was. Typically, i like to do about 40 second first steep and then 25, 30, 35, 55 depending on how the leaf evolves. It seems almost everyone has a different approach. I want to see some more formal guidelines in order to do more consistent and controlled comparisons.
TeaBro to have consistency for comparison, maybe try a rule like 3g p 150ml Gaiwan and set your own. Pros will brew this over long period to really extract all the tea can give and so you won’t make the “best” brew, but you will make a liquor that you can see what the tea has to offer and also a standard ratio.
Same. Said something about the product bot being available anymore or being reserved for certain costumers. Wonder if that has something to do with it.
@@ongoingmartin We'll just blame it on the techies 😆 But on a more reasonable Note, I'll just wait to find out the price. Propably going to be out of my price range. Only ordered my first batch of "proper tea" on friday after All.
Comrade Headcrab Welcome to the incredible teas. What did you decide to get? Hope you enjoy and get good value from the teas, though they do sometimes cost a bit more.
@@ongoingmartin Thx mate. A bit of everything. Gotta see, what my tastes are. Leaning a bit on the "darker" teas tough. You're right. But firstly, gong fu brewing allows for multiple Infusions so it propably reduces cost that way and secondly, there is still a lot of decent tea for everyday use.
They are hit and miss but can be amazing when you find a good one. It all depends upon terroir and weather. I heard 2020 was a really good year for high mountain oolong.
Cold brew vs chilled hot brew - is there any difference and which one is better? Cold brew seems abit wasteful of the leaves - lesser infusion compared to the hot brew with the same amount.
I really love watching your videos but I think it’s better if you have English Subtitle because my Chinese friends can’t understand you well. They said “ He talks so fast I can’t understand it well.” 😂 More vídeos! 😊
As a language teacher, tell your friends they should just keep listening! Don has a very neutral accent and excellent enunciation. Learners of any language need to listen to it being spoken by a native speaker at a natural pace. It takes time to train your brain to decode a new language quickly. That said, subtitles are nice but doing them well is very labor intensive!
I think it was just a bad way of wording it. Being 2000m closer to something 93 million miles away won't make too much of a difference haha. I think he probably meant the atmosphere is thinner and there is less of it for the light to travel through :)
Sounds very much like the well loved , Li Shan Formosa oolong, some say available since 1750’s and not as young as you imply in your narrative Still a very good oolong that can be well described in a few sentences. And not 40 mins of advertising on your part. Disappointing video !,
I love how Celine hangs on your explanations like they are completely novel to her, but she must have heard you rant a dozen times on the exact subject before. Perfect together.
I love doing cold brew on my high mountain oolongs! The coldness definitely compliments that fresh greenness taste !

Thanks for the video. Must try this one.
Don, will you please make a video explaining oolong tea on the spectrum? Light to dark?

My dad and I enjoyed this video together! He quite likes green oolong like Alishan cream so I'm sure he'd enjoy this one.

I love Li Shan and in my taste buds the very best high mountain oolong from Taiwan, it is grown on the old orchard belonging to Shang Kai Shek
Everytime i visit the mountains in Taiwan I can feel the spirits of the dragons hiding between the mist and clouds :-)
Tastes like snowy mountain peaks? YOU HAVE MY INTEREST NOW!

Agreed...Whenever I burn my tongue, the worst part is having to wait a few minutes to get my taste back.
I got a tea set just like that, but I'm afraid to to use it, I don't want to broke it, it's a really pretty set , it's small, I wait for mine,
Celine is the cutest!
Could you please cover about Lishan oolong tea, one of our favs! :D

I'll be getting some of this...But so early that the product link isn't working yet. 😭😭😭
Er, I mean, first! 😉

I love Famosa Oolong...so creamy and flora!
I love oolong-wulong 🍵👌
But like where are the ads on this video?
I had one at the beginning for a single-serve, powdered matcha that you mix with cold water XD
Is closer to the sun equal more light a valid argument? Reminds me of the counterintuitive aphelion-perihelion summer-winter thing.

Taiwanese high mountain oolong always reminds me of guava.
Tea Walter tea Walter
Is that too high for bug biten?
I think it is only the eastern beauty you want it to be bug bitten.
I'm with it
35:00 agreeing with my mystery HM!
Fresh Fresh Fresh
We need a fresh counter
The high mountain tea is picked only twice a year
Wrong 1 and a half times a year

how can it be sweet
Nice haircut, lol.
Sadly I really seldom see fairies drinking dew…
Doozy %)
