Thank you Scott for yet another informative video! I have watched your channel for well over a year now and can honestly your channel has changed my outlook on food and life in general, I have had a interest in food for well over 25 years and my first ever cook book was by Keith Floyd but it was a bit adventurous for a 22 year old from a council estate with no cooking experience! Your videos are superb! I seriously look forward to them each week and my butchery skills have improved no end thanks to you, The mrs and me started a cafe this year and we make our own sausages and cured bacon inspired by your recipes and knowledge, whenever we can, so thank you once again sir you’ve made a real difference to the culinary and food world! Keep up the good work!!
Perfect field dish for the hunt. Superb. No One does the money shot better than you - simply ... "Stunnin"!
Your recipes are simple yet innovative. Absolutely great stuff!
Just finished butchering my birds and am definitely using this sauce. My first time with pigeon and my mouth is watering already. Cheers mate from sunny north Queensland Australia

I ate wood pigeon on a bushcraft course I went on today, it was tasty and now I'm eyeing up our resident pair of wood pigeons that live in our garden... I see them in in a whole new light now 😛

That looked GOOD! Love the channel, Scott. Thanks especially for the butchery tips and tricks and a very Merry Christmas from hot and sunny Southern California!
Stir in a Tblsp or so of Dijon mustard at the end of your sauce just to balance the richness of the cream and bacon. Nice dish. ATB Doug.
Cracking with pappardelle pasta too! I add some tyme to the sauce too....

Crusty bread to mop up the rest of that sauce, looked lovely. You and your family have a wonderful Christmas Scott, looking forward to the new year.
MERRY CHRISTMAS SCOTT!
Squabb'in the deck M8!!! Love that you never fail to give us the money shot - eating it ! Merry Christmas M8!!!
discovering the flavour of wood pigeon was one of my best discoverys and would eat it over any other meat, i cook it slow and keep it turning when i do it as you say the flavour of best steak but no toughness or gristle, for folk who havnt shot pigeon reguler its wood pigeon not feral that lives around houses eating rubbish, a wood pigeon crop is always full of good grain :)
Merry Christmas and a very Happy and Prosperous New Year!

MERRY CHRISTMAS SCOTT AND HAPPY NEW YEAR GOD BLESS
Nice recipe, Scott! It makes me miss Pennsylvania. Dove season ran every year from Sep. 1 thru the 30th. They aren't as big as pigeons, but have a similar flavor and texture. I did them with just butter and garlic, but your treatment is a big improvement. I'd even consider adding a little mustard.
Merry Christmas Scott.
I swear I could smell those pigeon breasts cooking. One of my favourite meats!!
I'm an avid fan of yours, superb as usual, many thanks
Merry Christmas to you too mate

Merry christmas everyone and i wish everyone a happy new year .
Oh one more thing ive tried something like this before but instead of mash on a bed of creamed pearl barley and it was heaven on a plate. A tip for you all to try enjoy.
Scott where are ya..been a while and i can only watch the other videos so many times...#newvideos
Merry Christmas Scott. Not quite a 15 bird roast but I'll let you off! 😉
forgot to mention doing your pork pie this weekend awesome it is:-))
Looks great, Scott! I'm filled with envy because we just don't have things like that here, in Australia. There's no shortage of pigeons, but they're pretty manky, and there's no way one would ever consider cooking one.
Best wishes for Christmas and the New Year, all the way from Australia!
But, I'll bet your kangaroo steaks are excellent!
Shoot a couple you may be surprised. Here in the states I thought the same thing, but back in the bush there were some good tasting pigeon. Obviously you would know best.
Spotted doves are beautiful. Pigeons from more rural areas are fine. My kids even love them. Millions of crows too mate.
maybe you could raise your own and really fatten them up
That's pretty cool, I've got the same frying pan as you mate! Great minds think alike eh? Great video
If that dog turns up missing I am reporting You!! Great Video Scott, keep this kind of cooking alive. Merry Christmas!
Ineluctable Smith please I hate those little f#^%!
Don't worry, he's not East Asian. Civilised people don't eat Man's Best Friend. Even the tiny versions like that one.
HERESY!!!!! Scott where is the Colemans???
Again you've provided great skill, knowledge and entertain like the pro you are. Happy Xmas to you and yours. ATB for 2018
Hi Scott, wondering if you can cook a beef pot-roast. old-school long simmering and all Thank you from California.

As usual the dogs Scott, just got to get the little buggers to within 30 or so metres to ensure a clean kill with the air rifle , never been a big fan of the shotgun. cant wait to give this a go mate!
Have a great xmas dude!
Merry Christmas Scott!!!
