    Thank you Scott for yet another informative video! I have watched your channel for well over a year now and can honestly your channel has changed my outlook on food and life in general, I have had a interest in food for well over 25 years and my first ever cook book was by Keith Floyd but it was a bit adventurous for a 22 year old from a council estate with no cooking experience! Your videos are superb! I seriously look forward to them each week and my butchery skills have improved no end thanks to you, The mrs and me started a cafe this year and we make our own sausages and cured bacon inspired by your recipes and knowledge, whenever we can, so thank you once again sir you’ve made a real difference to the culinary and food world! Keep up the good work!!

    I ate wood pigeon on a bushcraft course I went on today, it was tasty and now I'm eyeing up our resident pair of wood pigeons that live in our garden... I see them in in a whole new light now 😛

    Stir in a Tblsp or so of Dijon mustard at the end of your sauce just to balance the richness of the cream and bacon. Nice dish. ATB Doug.

    discovering the flavour of wood pigeon was one of my best discoverys and would eat it over any other meat, i cook it slow and keep it turning when i do it as you say the flavour of best steak but no toughness or gristle, for folk who havnt shot pigeon reguler its wood pigeon not feral that lives around houses eating rubbish, a wood pigeon crop is always full of good grain :)

    Nice recipe, Scott! It makes me miss Pennsylvania. Dove season ran every year from Sep. 1 thru the 30th. They aren't as big as pigeons, but have a similar flavor and texture. I did them with just butter and garlic, but your treatment is a big improvement. I'd even consider adding a little mustard.

    Hi Scot, i would like that you take the bones and the leftovers from venison as the base fore soups. I do it for years and nothing go to wased and its everyones favorid soup. And and a kind of respect for the life and taste of venison. Good stuf you make. Regards out of Latvia.

    Looks great, Scott! I'm filled with envy because we just don't have things like that here, in Australia. There's no shortage of pigeons, but they're pretty manky, and there's no way one would ever consider cooking one.

      Shoot a couple you may be surprised. Here in the states I thought the same thing, but back in the bush there were some good tasting pigeon. Obviously you would know best.

      Spotted doves are beautiful. Pigeons from more rural areas are fine. My kids even love them. Millions of crows too mate.
