Hi there. My partner is a native New Yorker who used to go 'clamming', when she was a child. Consequently, she has a real soft spot for pasta with clams. Additionally, although we live in Spain, I was also tasked on insistence, to purchase linguini (ho hum !). Therefore, I finally bit the bullet and cooked it today....I have a seafood allergy, so could not indulge. I followed your recipe (other than Italian tomatoes....used Spanish, and wine....again Spanish !). Got a thumbs up for taste and a hug for nice presentation. I think the slightly spicy tomato tomato sauce actually accentuates the flavor of the clams. You should give this recipe a try is really outstanding.

Joe at 2:50 what you are seeing is a tan color that may appear to be sand but I can assure you it is not.What you are seeing is the Marsala Wine,garlic, and the clam liquor. I am an absolute stickler when it comes to preparing clams, I have made the mistake of not washing the sand off of clams in the past. One thing I also do, that was not seen, is I take the clam liquor and pour it into the measuring cup very closely so that the last few ounces that may contain residual sand are never used.

It gave the sauce a certain sheen, I'm not sure if you achieved the look but when I used the vinegar, it gave the sauce more shine. The acidic of the wine I used and that of the vinegar complimented the clams. It was very much along the lines of lemon complimenting crabs or salmon. I very much enjoyed the clam sauce you made before hand. I would've never though to do that prior but now I do!!! :)

Nice one! I make a similar version but I add 1 large Red bell pepper and a nob of butter then blend into the sauce before adding the Clams, It gives it a sweeter deeper flavour.

Hey way to go. That sauce is spot on. Mix pasta in saucepan though and what the heck I go clamming myself and can afford to chop fresh clams in sauce as well as leaving some in the shell. Thanks for the effort and tips mangia
This looks wonderful. Cannot wait to get to my market and hope they have fresh clams. I'm down here in SW VA and fresh seafood is almost impossible to come by. My son-in-law is from Sicily and the consistency of the sauce looks identical to what they make there - not too thin, but not too thick. And they never cook the pasta in the sauce, as one person suggested. Unless, of course you are making lasagna.

Thanks Joe for your comment, and question. I will start off by saying my children are all grown and out on their own. My wife almost never eats my food. She likes rice and vegetables. I myself enjoy all types of food! some nights it might be Italian food. Then I just think of an Italian recipe, like Italian Linguini With Red Clam Sauce for example. Then I get my camera out and start cooking, and filming. Eat the meal and edit and post the video. This then gives me content for my web site.
This is probably my favorite Italian dish but I'm so picky about it. There was a chain restaurant in Sacrament called The Pasta House that made my favorite rendition of this dish. The sauce was amazing. Everywhere else I've tried it I'be only been disappointed, even at much fancier and more authentic Italian restaurants. Everything always seem not seasoned enough compared to what I ate at The Pasta House. Your recipe here looks very good and I can't wait to try this tomorrow. I'll most likely add a little bit of fish sauce and twice as much garlic and chili flakes for an extra bite in the sauce. Thanks for sharing it.

I love Italian linguine with red clam sauce, I put the aromatic herbs and earlier to infuse them with the tomato sauce. But you are absolutely correct, it's probably best to have them at the end of the cooking process to enhance their flavors. Thanks for your insight and comment on my recipe.

I know this is an old video, but just in case someone's listening! Is it safe to do the clams first, then leave them sitting for 30mins? (Do they go in the refrigerator in the meantime?) I'd make them after the tomatoes are cooking to be honest.

I think, if you use canned claims, are fresh clams it would be best. It might be impossible to make clam Italian linguine with red sauce without clams. But at the end of the day I'm not the smartest guy to walk down the block. Give it a try, cheers!
Okay, Chef Baldy, Great looking dish and I'm sure it's tasty. Two things I would do differently: 1. Soak the fresh clams in cold saltwater for 30-60 mins so they can expunge their sand and waste. This is a very important step. THEN wash them again. 2. Finish the pasta IN the sauce to collect all that fine flavor you developed with the garlic, basil, olive oil and Italian tomatoes. A splash of Chianti wouldn't hurt. I wish you well. This from a simple, old COOK, not a master chef.

My Mother-in-law was "off the boat" from Caserta, Italy. She came to the US when she was in her mid 20s. Putting cheese on seafood was always a no-no, but I happen to like it! I'm from Southern California. We put cheese on tacos, why not pasta?! Many purists say no cheese, but as the video's author says, its a personal preference!! My wife and her family thinks i'm "pazzo"!!

It gave the sauce a certain sheen, I'm not sure if you achieved the look but when I used the vinegar, it gave the sauce more shine. The acidic of the wine I used and that of the vinegar complimented the clams. It was very much along the lines of lemon complimenting crabs or salmon. I very much enjoyed the clam sauce you made before hand. I would've never though to do that prior but now I do!!! :)

Nice one! I make a similar version but I add 1 large Red bell pepper and a nob of butter then blend into the sauce before adding the Clams, It gives it a sweeter deeper flavour.

Hey way to go. That sauce is spot on. Mix pasta in saucepan though and what the heck I go clamming myself and can afford to chop fresh clams in sauce as well as leaving some in the shell. Thanks for the effort and tips mangia

This looks wonderful. Cannot wait to get to my market and hope they have fresh clams. I'm down here in SW VA and fresh seafood is almost impossible to come by. My son-in-law is from Sicily and the consistency of the sauce looks identical to what they make there - not too thin, but not too thick. And they never cook the pasta in the sauce, as one person suggested. Unless, of course you are making lasagna.

Thanks Joe for your comment, and question. I will start off by saying my children are all grown and out on their own. My wife almost never eats my food. She likes rice and vegetables. I myself enjoy all types of food! some nights it might be Italian food. Then I just think of an Italian recipe, like Italian Linguini With Red Clam Sauce for example. Then I get my camera out and start cooking, and filming. Eat the meal and edit and post the video. This then gives me content for my web site.

This is probably my favorite Italian dish but I'm so picky about it. There was a chain restaurant in Sacrament called The Pasta House that made my favorite rendition of this dish. The sauce was amazing. Everywhere else I've tried it I'be only been disappointed, even at much fancier and more authentic Italian restaurants. Everything always seem not seasoned enough compared to what I ate at The Pasta House. Your recipe here looks very good and I can't wait to try this tomorrow. I'll most likely add a little bit of fish sauce and twice as much garlic and chili flakes for an extra bite in the sauce. Thanks for sharing it.

I love Italian linguine with red clam sauce, I put the aromatic herbs and earlier to infuse them with the tomato sauce. But you are absolutely correct, it's probably best to have them at the end of the cooking process to enhance their flavors. Thanks for your insight and comment on my recipe.

I know this is an old video, but just in case someone's listening! Is it safe to do the clams first, then leave them sitting for 30mins? (Do they go in the refrigerator in the meantime?) I'd make them after the tomatoes are cooking to be honest.

I think, if you use canned claims, are fresh clams it would be best. It might be impossible to make clam Italian linguine with red sauce without clams. But at the end of the day I'm not the smartest guy to walk down the block. Give it a try, cheers!

Okay, Chef Baldy, Great looking dish and I'm sure it's tasty. Two things I would do differently: 1. Soak the fresh clams in cold saltwater for 30-60 mins so they can expunge their sand and waste. This is a very important step. THEN wash them again. 2. Finish the pasta IN the sauce to collect all that fine flavor you developed with the garlic, basil, olive oil and Italian tomatoes. A splash of Chianti wouldn't hurt. I wish you well. This from a simple, old COOK, not a master chef.

My Mother-in-law was "off the boat" from Caserta, Italy. She came to the US when she was in her mid 20s. Putting cheese on seafood was always a no-no, but I happen to like it! I'm from Southern California. We put cheese on tacos, why not pasta?! Many purists say no cheese, but as the video's author says, its a personal preference!! My wife and her family thinks i'm "pazzo"!!

You know it's a tossup, clam linguine is always a tasty dish. My preference however is the recipe you saw here which features tomato-based sauce. But gosh darn it, the white sauce is still a winner too! Thanks so much for your comment
