Vampires were not characterized by their pale skin or that they do not age, the point was they look undistinguishely from living people and only from some little things like not eating garlic you can deduce who actually is one. And while vampires did drink blood of their victims, the biting wasn't the only way to consume it.
In the original Dracula book, he's said to look old in the beginning, with white hair, a big mustache, etc. And only after he starts replenishing his... food, does he "become young". The way people depict Dracula nowadays mostly resembles that last stage of his, not his original appearance. I love it when people are book-accurate with their depictions of him. He's one of the few characters who get a thorough physical description and it's so iconic imo. So honestly, this version of Dracula is, physically speaking, more accurate than million others.
