I just started using a food processor in making my cheesecake batter after watching America's Test Kitchen. My cheesecakes always comes out smooth compared to before when I was using a stand mixer. I was surprised to see you use it in this video and I have been watching your videos since before the pandemic, The Scran Line, and I never noticed that you use a food processor to make your cheesecakes. Have you had any issues of over-mixing the batter causing it to crack while using the food processor? I also remove the creme filling and just use the chocolate wafer of the Oreo cookie because I find it too greasy if I use the whole cookie and add butter to it for the cheesecake crust.
