I discovered Kefir about 6 months ago when needing some plain Kefir for a recipe I wanted to try. Since then I have it on hand at all times. It makes the best "buttermilk" pancake and biscuits. Also, added it to a bread recipe that called for sourdough, not quite the same but still gave the bread a wonderful sour taste and silky texture without adding any butter. I have not tried it any other way and am not into drinking it or even milk, but will trying in future recipes that call for buttermilk.
The word Kefir is derived from the Arabic word خاثر ḵāṯir (Clotted/coagluted, clabbered). Bedouins used to store milk inside bags made out of goat stomach, when they travel they used to have these bags on the camels so it will keep shaking all the time while traveling, the next day the milk will get Clotted, they call it Laban Kathir (Clotted/clabbered milk).
@@Ferdiahayes Some people claim it is derived from the word Kief, which means good feeling when you are on drugs, this is quite a stretch. Kefir is derived from the word ḵāṯir makes more sense, especially that the letters ḵ and ṯ are not used by many Indo-European languages therfore they were shifted to K and F (ḵāṯir -> Kafir). Also the word ḵāṯir is still used in Arabic refering to all fermented milk, and the word derived from the root word ḵ-ṯ-r which means Clot. خاثِر [ḵāṯir] {adj.} EN viscous sticky clotted coagulated syrupy thick

These grains are so unique I'm thinking that the manna from heaven showered down upon Moses' tribe was at one time put into their milk. Modern science can't even create these grains from scratch ! No one can !
Not sure if what I make is kefir. 4 years ago a guy gave me a yogurt substance in a little plastic bag and I put a teaspoon of it in a pint of milk and leave it for a day at room temperature and then put it back in the fridge and save a little to make a new jar. It has a very mild taste and doesn’t become stringy. The culture came from Finland and who knows how old it is. I wouldn’t talk about it using the word grains or saving the grains. I would say the word starter as in the process of sourdough. So is there a difference between kefir and what I do?

I could make my kefir from store bought kefir.. Just warmed a glass of whole milk add 2 spoon of store bought kefir. Keep the glass in a warm place. If the weather is cold then place it in a oven after heating it mildly just so that its warm enough and switching it off
True but store bought kefir doesn't contain as much of the microbes due to the heating and other additives for preservation and shelf life Plus store bought is packed with corn syrup One of the goal is insulin balance Curb the hunger cravings But it better than just milk But I would look into buying the grains Once you have grains you set for life Place in freezer When ready to re use let it sit over night in the fridge If you go from freezer to milk it does due to shock and awe Also no metal should come in contact the metal kills the bacteria All the best

Probably not since the bacteria feed off the kefir. Milk kefir is supposed to be ok for people who are lactose intolerant. But you can make water kefir.
Need to find some seeds , to start the cultures . I make my own yoghurt , useing either a base from a packet , with the addition of a probiotic capsules , or in making it from scratch , 2 capsules of probiotic , plus the culture . This ensures there's a healthier gut biome , than without it , and it shows on exiting , along with a reduced aroma .
You can grow kefir, in the same way you do live yoghurt. I just bought a bottle from the supermarket put 1cm of it in a jam jar and topped it up with milk. Then left it in a microwave with the lid off. Done after a day or so. I have a few jars on the go now (I use it for cereal in the mornings), so you don't need the grains.
Sorry when u make kefir with grains or without grains second fermentation the microbiom will increase in larg amount and that's what u want to consume. U r loosing the benefits when u shortcut grains
Using kefir in bread or pizza dough is a waste of kefir. The high oven temperatures would kill the beneficial bacteria. Sourdough bread is not any healthier than commercial yeast bread as the yeast is killed in the oven.

I am a long time kefir lover and I always share it with my grandson who also loves it. But somebody told me about alcohol levels in kefir, from 0 to 4 g and now I am not sure that kefir is safe for kids. What do you think.
Alcohol is essential carbs/sugars that are converted into alcohol through a fermentation process by yeast. While Kefir is a type of yeast like fermentation. You will typically need specific yeasts in order to convert the sugars into an alcoholic drink. An example would be wine yeast. It is used in the fermentation of grapes to turn the grape sugars into alcohol after some time. I've also made fermented sauerkraut too, however I don't get alcohol from the sauerkraut since its another different fermentation. So you should be most definitely safe with your grandson. Its a great prebiotic and protein drink to have young kids drink for their bodies

Many centuries before Rishis knew this about gut bacteria. Curd was and still is most important part of Indian diet.
Curd is still the best...😊
Kefir is different from curd.
@@gabbar51ngh but comes under pro-biotic.
@@kasturipillay6626 kefir is very potent compared to curd. Sadly, it's slightly hard to get good kefir
If you heat it, you kill the beneficial bacteria.
Heating kefir kills all the bacteria, just so ya know 😁
I thought heating the kefir kills the bacterium. You should look into it.
Please how can I get this kefir? By the way I live in Algeria

@@Auzzy9 same question!
I read that it came from the Turkish word for "good feeling"
@@Ferdiahayes
Some people claim it is derived from the word Kief, which means good feeling when you are on drugs, this is quite a stretch.
"Kief (pronounced [keːf, ki(ː)f, kɪf]; from Arabic كيف (kayf) 'pleasure'), sometimes transliterated as keef, also known as cannabis crystals among other names, refers to the resinous trichomes of cannabis that may accumulate in containers or be sifted from loose, dry cannabis infructescences with a mesh screen or sieve."

Honey should not be mixed with kefir, because its naturally antibiotic action will kill off the good kefir probiotics that you're trying to get into your system.
How's it going
Chia pudding with Kefir and Gallberry honey is wonderful!
I love the happy music during the fracture and death part of the presentation. 🤣
NOTE: the kefir was mixed in a blender. This is a no-no (metal blades)! So blend fruit with small amount of organic fruit juice then combine with wooden or silicone paddle

Kefir is not milk anymore. Its help to get rid candida..just give it a try!
Most wonderful site to know about kefir - details explained . Highly useful info .
I’m an expat living in the Middle East and noticed it’s very popular here. Just bought some and excited to add it to my diet!

Where do you get the grane to buy to make kefir
I LOVE kefir
Second ferment is easy too or w/fruit
Or if it’s good taste, just plain
Pastured milk is best flavor
Bought my first quart of strawberry Kefir and I’m already sold in the texture and taste. I hope it helps regulate my digestion issues, morning sickness, and hopefully my mood in the long run!
Buy plain kefir, don't get it with sugar in as the sugar will feed the bad yeast in your gut.
Only get plain
You should only use plain for gut issues.
L ruteri can cause babies to come early.
If you're having digestive issues, plain is the best choice, strawberry is much too sweet, get the plain unsweetened made from raw milk if possible.
Don’t combine banana and berries in a smoothie. Bananas have a compound that blocks the benefits of polyphenols in berries and other polyphenol rich foods.
I can always depend on Mashed to take something interesting and botch up the explanation.
I hate yogurt but love kefir. They taste very different IMO.
In Chile, they call it "yoghurt de pajarito"/ yoghurt of Little birds
In the U.S. birds just eat yogurt with everyone else.
I feel sorry for them.....
I could make my kefir from store bought kefir.. Just warmed a glass of whole milk add 2 spoon of store bought kefir. Keep the glass in a warm place. If the weather is cold then place it in a oven after heating it mildly just so that its warm enough and switching it off
True but store bought kefir doesn't contain as much of the microbes due to the heating and other additives for preservation and shelf life
Plus store bought is packed with corn syrup
One of the goal is insulin balance
Curb the hunger cravings
But it better than just milk
But I would look into buying the grains
Once you have grains you set for life
Place in freezer
When ready to re use let it sit over night in the fridge
If you go from freezer to milk it does due to shock and awe
Also no metal should come in contact the metal kills the bacteria
All the best

But the issue I'll like cleared up
Making it from store bought kefir being ultra pasteurized additives for shelf life etc many strains are killed off

Can you use lactose free milk to make kefir?

Bread has small amounts of alcohol, and the 4g comes from a big batch. There is alcohol in everything with sugar (glucose, fructose, sucrose etc).
It’s absolutely fine
Peach kefir is my favorite!
