I remember eating this 20+ years ago in Yuen Long. Lots of celery and garlic. Had a thick sauce back then. Came with a pile of steamed rice. Great dish.

Lilmama Taurus u can use chicken cubes melt with 1/2 cup of water or less..u can use chicken stock in a box aswell or ur homemade stock(boiled chicken bone/feet.)inshort u can use either of them hehehe

Is it ok if there is no Chinese rice wine to marinate the chicken?
yes, it's okay. You may substitute Chinese rice wine by Sherry, Sake or use more Ginger Juice in this case.

Just soy sauce

Why not use the celery juice ?
as salt is added on stir-fried celery, the celery juice may cause too salty.:)

Cometa Vargas she don't want u to use the celery juice
Cometa Vargas cooking in high heat process makes the meat tender and juicy and specially the nutrients will not break down... so the cooking time is different as you can see it will set aside first the veggies before mixing together .... why you want to eat raw chicken??? Or mallow veggies i dont think so😂😂😂

She left out shallots, when she threw in the ginger and garlic. Not a good cook.
Here comes the negative comment. You don't really need green onion it's just optional for the flavor like ginger and garlic.
This is chinese foods.they are not using onions..mostly they used is garlic and ginger only
He met green onion.
My last Bos never cook frying 🍳 use shalot, she use ginger and garlic only.
