HOMEMADE HAMBURGER, HOW TO NAIL IT EACH TIME, THE BUN AND THE BURGER MADE FROM SCRATCH !DELICIOUS!

  • These hamburgers are "high on demand" because I make the burger and the bread (bun) from scratch . These yummy hamburgers really tickle the taste buds of my family and my guests. Always a success!
    HAMBURGER (BURGER & BREAD)
    INGREDIENTS:
    Ingredients for the BREAD (BUN)
    Stage 1 Stage 2
    Milk 200 ml. Egg 1
    Water 125 ml. Salt 1 coffee spoon
    Sugar 1 tablespoon Olive Oil 2 tablespoons
    Flour 2 tablespoons Flour 500 gr.
    Fresh Yeast 21 gr.
    (dry yeast) 2 packs (22 gr.)
    Ingredients for BURGER (meat)
    Minced Beef 500 gr.
    Salt 1 coffee spoon
    Ground Black pepper 1/2 coffee spoon
    Ketchup 1 coffee spoon
    Pomegranate syrup 1 coffee spoon (OPTIONAL)
    MAKING THE BREAD (BUN)
    Put 125 ml. of water and 200 ml. of milk in a big bowl/container. Add 1 tablespoon of sugar, 2 tablespoons of flour and +/- 21 gr. of fresh yeast. (If you opt for dry yeast, then use 2 packs) Whisk them well until all the ingredients are dissolved. Leave it for 10-15 minutes in the room temperature to rise/bloom.
    After 10 minutes, add 1 egg, 1 coffee spoon of salt, 2 tablespoons of olive oil (you can use any vegetable oil) and 500 gr. of flour. Then knead the dough. (at least for about 6-8 minutes) Cover the container with a stretch film and let it sit for an hour in the room temperature.
    After one hour, put the dough on the kitchen counter top and knead a little bit more. Then divide the dough into equal pieces (normally, you can get 10-12 hamburger buns, depending on the size you would like) and shape them into round forms. Put them on the tray covered with cooking paper (or smeared with oil) , cover them with a cloth and let them rest for 45 minutes.
    After 45 minutes, brush some egg yolk on the buns and sprinkle some sesame seeds and black cumin seeds. Then put them in the oven at 180 degrees for about 30-40 minutes. (Baking time might vary depending on the oven, so please check regularly without opening the oven door.)
    When cooked, let them cool for a while before serving.
    MAKING THE BURGER (MEAT)
    Put 500 gr. of minced beef in a big bowl/container. Add 1 coffee spoon of salt, 1/2 coffee spoon of ground black pepper, 1 coffee spoon of ketchup and 1 coffee spoon of pomegranate syrup (optional). Mix all of them well. Divide the meat into equal pieces, normally you can have 3 good sized burgers with 500 gr. of minced beef. Shape the burger mixture into a nice round shape. Then, cook the burger on a non-stick pan for about 5-6 minutes on each side. To make sure that the inside of the burger is cooked well, put the burgers in the oven at 180 degrees around 6-10 minutes. This would give you well-cooked and juicy burgers.
    All you need to do now is to create your hamburger according to your taste. We like putting mayonnaise, mustard, ketchup, a thin tomato slice, lettuce and caramelized red onions. It is all up to your taste and liking.
