Omitted important step: first toast the pods in a skillet. This helps bring out the flavor and makes it easier to open. From here you can remove the seeds from the pods and grind them by hand.

In the Indian cooking, cardamom powder is mainly used in the sweet dishes and the whole pods're used in the savory dishes

Awesome information, thankyou. If one isn't interested in toasting the pods, instead of using a knife, I have found a sharp crack with the pestal in the mortar cracks them open. Might save a random injury with the knife. I'm trying this spice for the first time, and am really excited about adding it to stuff. ☺

What a simple & straightforward presentation, thanks very much. I tend to just squash the whole pod with the back of the knife then add to my curry but of course it's hit and miss as to who gets the seedpod in their portion so from now on I'll de-seed as you suggest and discard the husk.

Greem Cardamom is one of my most favourite flavours. I put the whole pod into the Mortar it rmoves the shell so much quicker. I also put the shell into my milk when I make Chai as well. If you are cooking with it then just scoop out the shells and you are done in seconds.

I am only now investigating cardamon as a spice for my cooking. I know almost nothing about cardamon. I have not yet seen, smelled or tasted cardamon. Thank you for this informative video. (baby steps . . . at 68 )
I imagine using whole cardamon is something like using whole fresh ground black pepper compared to the ground black pepper you get in stores; which might have been ground months earlier then placed in a container, losing the light oils and most of its flavor.

      Cardamom is super superb!
And they seem to last for eternity.
I'm talking from a funny experience of coming back to some goods i kept them, while away.
It's over 8 years and these packs of cardamom, seem to be hail and hearty!
      🤣.

My gain, right now, as I will not get them at such prices again.

That is a valid question. What I would do is get the contents out of the pod and grind them up. If you want to take the time you can separate all the little "balls" out of the pod. I leave them whole and cook them with rice. I will put cardamom in coffee but I use the "ground stuff" (about 1/4 tsp. per 2 cups of coffee... more if you like it that way.)
