I also feel the pain of the specific greens and the papaya, I couldn't find green papaya when I did Thailand
So interesting to me as to what can and can’t be found in certain places/countries. I cannot imagine how you would do a global cooking thing without doing communal meals, since the “national“ dish of most countries is that kind of thing. Good on you!
I usually remove the clams meat from their shells like mussels and cook them in coconut cream using the same ingredients as you used. Its so yummy especially if you add the island cabbage or slippery cabbage in the Solomon Islands 🇸🇧. Btw, your recipe is also mouth watering. Now I miss my home country Solomon Islands 🇸🇧 and its local delicious cuisine ❤❤
