    What is the quality of the meat compared to the natural environment? Is it the same quality of meat

    What does "purge" mean in the finishing tank? Also, since these are farm raised, do they lack the mercury that a wild salmon would have from bioaccumulation? Also, do any of these salmon wind up with parasites?

      The mercury content of the fish depends on the mercury content of the feed you give them.

      Purge here means the fish are not fed and allowed to pass out all remaining feacal matter in the guts, so its taste is not impacted.

    very detailed... but what are the 'best practices' - that was not covered. (Only asking, as I know this answer will vary to whom one may ask)
    * can you do this with Sockeye salmon? King of fish.

    Do all stages use freshwater?

      Unlikely. They are usually transferred to saltwater tanks to finish smolt for about 3 weeks. Then returned to freshwater for sales.

      From the video it would seem as though they use only fresh water, odd for a saltwater fish.
