    I believe the temps you mentioned are the final temps so I like to pull my chops about 5 degrees below the final temps to allow for carry over. And...this may worry you...but I pull my chops at 132 degrees. There's a little pink but no one has ever gotten sick and they're very tender and juicy. A little off subject but I like to brine my chops too. Thanks for video. Appreciate you!

    My go to pork recipe is simple. Cheap pork loin cut into 1" thick chops. Brine for 1-1.5 hrs. Season with SPG. Throw them on the smoker at 250F. At 110 internal I brush them with my mustard sauce. Pull them at 140-142 internal. I've done a couple hundred of these and everyone loves them. Super juicy and tender. I'm right up the street in Middletown so I get to cook in the late afternoon darkness as well. Keep up the good work.

    These should be high heat grilled to develop a crust … not indirect cooking .

      If thats what your looking for. Your cooking method isn't limited because its a pork chop but you do you.
