In India we took our ingredients (rice and dal) to a local house where they had a garage business for grinding doughs and batters, something that all the local households needed. They had a quasi commercial scale grinder. The next day i think we walked over and picked up the fermented batter and paid them for the grinding. It was so enterprising and typical of Indian neighborhoods 😅
Yes that still happens..... my mum still gets all her grains ground locally

You can use that exact same batter to make dosa. It's basically the same thing. Maybe the rice to dal ratio is slightly different but you can still do it..just water the batter down a bit more for the dosa

I'm so grateful for your idli video! It's totally doable now! I've made dosa and uttapam but, haven't tried idli so, can't wait. I make the batter and store it in the fridge ,it stays good for 5 days.

I was desperate for this recipe because I love the idli my friends made for me before I moved house. I saw them last month and told them I now have the recipe so can make my own but I didn’t realise they went to so much trouble for me and they said they didn’t, they buy the idli ready mix! 🤣🤣

Hi Chetna, I have tried Idli here in South Africa before but they were the sweetened version made with maize flour and all purpose flour or cake flour. To ferment I normally add yeast. I am eager to try out your version. Looks divine. Thank you 😊

I've only made idli from a packet mix! Which is very easy but the flavour isn't as good as from scratch. Fortunately we've got a really good South Indian restaurant near us for whenever idli/dosa/appam cravings strike.

Because they both are different grains and grind differently..... you will understand it when you feel the paste.

Hi Chetna, I have a question about the fermentation process. If it is winter, would a bread proof setting in an oven work? Or just room temp patients?
Yes. The bread proof setting most certainly. I'd just keep the pilot light on. Also keep a bowl of hot water in there. Humidity works wonders in the fermentation

Ah! Idlis! I have a question - if the batter doesn't ferment, can you use sourdough starter or yeast?
You can give it a bit more time and the bicarb before cooking helps, no yeast!

Chetna, what type of rice have you used? Is it idli rice or can I use any rice?
Yes idly rice are best , but you can also use sona masoori raw rice
I used Basmati rice because my friend adviced it. but idli rice is good too if you can find it

Just normal basmati rice
Are premade, frozen IDLI OK? If they are I can check the frozen section at my local Indian store on my next visit/ I'd like to make my own, but time and space would make it difficult. The fixings aren't a problem at all, just the dough.
Sadly I cant comment on premade frozen idlis as I have never had them

Frozen idlis are no match for the fresh ones in terms of texture and taste. They may also have strong chemicals to prolong their shelf life.
You can use premade idli dosa batter sold at Indian grocery stores. You will get them at the refrigerated section not the freezer section. All you need are idli moulds.

One quick question if I may ask. How long does homemade batter keep and how can I tell if it's not OK to use? I keep it in a sealed container in the Fridge and I'm trying to be on the safe side so discard any batter that hasn't been used after four days. There are only two people to feed in my house and it's a pain making small batches every day, they both like idli and dosa, love your idli stand btw, it's very difficult to find a quality one here in the US that isn't cheap and tinny, and they mostly make small idils, yours look more of a decent size. Hopefully you'll read this and have an answer for me. Thank you and namaste.
The batter usually lasts about 4-5 days and not more.
@@FoodwithChetna Thank you for the reply. It's taken a few tries, but I seem to be getting the hang of it and the batter is fermenting. Idlis are coming out pretty well, there were a few "bouncers" in the beginning. Next are dosa, I've watched your video and your Mum makes it look so easy, mine are still hit and miss so the family is getting dosa for breakfast every day until I get it right and safe and pleasant trip home for your Mom. 😁🙏

This dish is very healthy. We give it convalescent patients without chutney or sambar. We just give idli and some liquid plain boiled salted dal. As kids we would eat idli with ghee and sugar. Not very healthy but very yummy.
We South Indians will have a batter in fridge pretty much every day no matter what..

You say "2 days hard work", but in those 2 days there's far more "soaking time" and "fermenting time" than actual working time.
Technical question - what's doing the fermenting? You don't add any kind of yeast or bacterial inputs.
u dont need soda if u are using good idli rice , they come out super eoft .soda some say makes stomach upset , i just use thrm baking cqke ,

The idly batter shouldn't be this fine. A course batter always make beyter idlys. Shall share the recipe if you wish to ur mail.
Even the chutney, shouldn't be of this consistency.

NOT AT ALL and its because of comments like these I mentioned in the start of the video that this recipe is from my south Indian born and bred friend. You have forgotten how big south India is I guess...... hope this will help!
