A former waitress here, divorced from a (now retired) chef (go figure). You are correct! Oh, and the ego too! Maybe we just did everything to quickly!! Hard to slow down after 8 hours of intense physical behaviour!
Some of the most memorable food I've had was in New Zealand on Stewart Island, which is the most southern part closest to Antarctica. I ate an unbelievably delicious seafood chowder and a Mutton Bird. What was interesting though is that the setting was like you'd expect of any decent restaurant, yet they were playing Smashing pumpkins. Can't remember the song but it was skipping and would repeat over and over again. It was such a funny memory but I'll never forget that wonderful food

they should bring back Friday night with jonathan ross and keep all stage assets and get a new house band something like a loud and powerful jazz band or a band that can pump up a crowd
If it was chewy it might have been a horse used to do labour or racing, because horse meat is generally more tender than beef. Even better than horse is female donkey meat , if you cook it right , pretty rare, and with a mixture of olive oil , garlic, oregano and parsley on top (it s called salmorigghio in sicily) it would be the best piece of meat you will probably ever eat
American customers are generally on a budget that makes eating out a special occasion, unfortunately that means that they can't afford to be hungry when they leave an expensive meal and will take leftovers with to offset costs the following day. Unfortunately they don't have a social system like the UK.

haha... I'm Dutch, we sold horsemeat as beef (cow) for a while, also internationally. Well, some ended up as beef (and they were caught by inspections). Anyway, half of Europe probably ate horse without even knowing - because agriculture is a huge Dutch export product and some of the cattle farmers/butchers/distribution chain did get away with it for a while (horse meat is cheaper, because demand is low). We ourselves (the Dutch) eat horsemeat like any other meat, though a lot of people don't like the taste of it (like with rabbit, lamb, fermented herring, etc.). But it isn't frowned upon.
