Glad to see an indian doctor keeping the context of indian cultural practice in mind when working with her patients. In my own home i tried to get my mom to eat more eggs or chicken but her heart is not in it. She craves the things she ate growing up. So i made small changes. Like dosa, which is normally made with 3:1 ratio of rice to dal. I asked her to make it with a mix of soaked dals only (no rice) grind and add some shredded veges and use that to make dosa. My daughter hates regular dosa but will eat dal dosa (adai). It became a thing for my mom to please her granddaughter and would make it often and now my mom also is eating dal dosa, trying different combo of dals. yes its still carbs but at-least more protein and less processed than regular dosa and she is happy eating indian food. Small wins. And yes her A1c has gone from 6.1 to 5.8. I doubt i can get a lower than that but at-least it quite a bit better than before.
Congratulations on this smart change! Small wins get us there. Consider adding the other changes: alongside nutrition, sleep, stress management, muscle building and then fasting. She can get the A1C lower!
Deepa, it's not only the dosa, it's the vegetables as well... potatoes and starchy vegetables, fruits, such as mangoes, all Indian sweets are you bad .. so really you have to look at everything you put in your mouth... stay within a low carb, moderate Protein and high vegetable fats...🙏🙂
@@gainjohn not true. I have a vegan friend who sends me the studies, all are epidemiological. The rct studies like Minnesota Heart and Sydney heart studies show the opposite of what you are saying.
As an Indian who is not a vegetarian, I think we have some of the worst diet habits. Vegetarian is not healthy if the composition of the meals is high processed carbs, veggies and dals cooked in lower quality seed oil , sugary deserts. I have changed my diet to higher protein and healthy fats, including red meats and eggs. Got rid of most carbs which I don't miss at all. I don't take much fruits either because they are high in sugar. And I feel light, agile, alert, sleep better, I can exercise a lot more.
@@sanpat2220 no Sir. The good thing about eating a high fat and protein diet is that overeating becomes hard. It is very difficult to eat a lot of meat but it is so easy to eat a lot of rice, sweets and bread. Stick with a good portion of fat and protein. My health has transformed

Sadly I know lots of people of Indian heritage in the UK and type 2 with cardiac and kidney complications is endemic - although obesity still relatively rare amongst them ( yet ) . Apart from nutrition I have a big interest in the religions of South India and it is noticeable on images how many sadhu's/ sanyasins are obviously sarcopenic ( almost cachetic ) .
Logical doctor. Im on intermittent fasting 24 hours and low carbs i lose 36 lbs. and pre diabetic... im loving it. Its a challenge no Rice, no bread, no sweets, no sugars as much as possible. Keep what you're doing doctors... we can prevent diabetes
I aplaud the efforts of the host to hit on such an important region centric advice and interaction. Indians have been having Chapati every day all their lives minimum 2 meals a day. I am type 2 diabitic and have just started avoiding grains and Chapatis. It is already showing good improvement. Thanks to Dr Sanghani as well for her efforts and guidance.
Dr, very enlightening about food & cultural beliefs. I am in Sydney Australia and 90% of my Indian friends call themselves non- vegetarian and eat little protein. Most protein eaten are at restaurants/ take away which is always eaten with heavy carbs. However they eat lots of carbs & sugars together in the form of dessert. Protein with greens/ vegetables are rare.
I have an Indian student living in my home, she is vegetarian and comes from a state in India that is basically vegetarian. She is not all that healthy. It occurred to me that if being vegetarian was healthy it would show up in the stats. If the average lifespan in India was, say, 120 v 80 in the 'west', then we would have to look seriously at why. Yet, India is becoming the diabetes capital of the world. It was good to hear Dr. Sanghani because culture is an important aspect of health and what you eat.
That’s because vegetarian still includes animal products high in saturated fat like dairy and also oils that are processed liquid fat with 14g of fat in 2 tablespoons.

There are multiple factors that contribute to lifespan rates including socioeconomic status, genetics, etc. Diet is a part of it but not the sole reason. Think a little.
India is emblematic of why simply going "plant based" is not enough to ameliorate metabolic dysfunction. India is emerging as one of the diabetes epicenters of the world. India has one of the largest percentage of vegetarians of any country in the world, and this adherence to a plant based cuisine is the product of centuries of religious and culturally fueled vilification of meat consumption. Even among the groups that do eat meat, the level of meat consumption is paltry. Meat is mostly used, even among those who have omnivorous diets in India, as a side dish or condiment. Hence, if the spurning of meat was the solution to our dietary ills the efficacy of vegetarianism would have manifested in India. The exact opposite of better health has happened instead. What this removal or reduced consumption of meat has done in India is made the people reliant mostly on starches and seed oils for their calories, thus engendering diabetes on an epidemic scale. This issue hits tragically too close to home, as both of my parents are from India. While they were/are meat eaters, they eat a minuscule amount, while relying heavily on starches. The result is my father died of complications of diabetes and my mother is afflicted with diabetes. Nearly all of our Indian friends are themselves diabetic or have a member in their family who is diabetic. We need more Indian physicians like Dr. Sanghani to work within the culture, and disabuse people of the notion that copious amounts of rice, bread, (i.e. naan and roti) potatoes, and lentils are sacrosanct dietary components. Couldn’t agree more. This is a huge problem in Indian culture and we need to keep spreading the message and speaking up. Not just the message of low carb but red meat consumption is also very very important. Poultry and fish which Indians do eat in small amounts is better than vegetarian vegan, but red meat is optimal. I have seen 100s of people around me in India living into their 70s, 80s, 90s, all they had common was just eating two times a day, either Chapathis in limit or rice, no snacks at all absolutely, and living healthy lives, meat or eggs have nothing to do with it.
I mean not to be aganist Carbs but eating th right Carbs can be healthy like veggies like cabbage , cauliflour and so on. They have healthy carbs but the unhealthy carbs are Wheat Flour, Rice , Bread , Biscuits and all bakery items are unhealthy Carbs .
This was awesome to hear the experience in Indian context. As a nursing faculty I find it often confusing and paradoxical to teach nursing students about low carb and high fat diet when the dietary advice in textbook for every disease including cancers and metabolic diseases is LOW FAT diet. It's quiet a struggle to get the idea across to young professionals early on.

Am pre-diabetic had gestational diabetes have a strong genetic background for type 2, mom's and aunts got type 2 in 30's..however I think I have avoided so far at 40 is by limiting carbs especially rice

I was about to graduate from a maximum dosage of metformin to glypizide (and eventually to insulin) for my type 2 diabetes when I decided it was worth the "misery" of a ketogenic diet to get out of the trap of increasing medications for my chronically high blood glucose and slight neuropathy. I was really worried at first, because I only like to eat carbohydrates! No meat, no vegetables, just mostly grains and sugars. It is a psychological thing based on childhood trauma. But what I discovered was that it is possible to stay in healthful ketosis on a diet just like this! I just eat special ketogenic sweets, like protein bars, and tofu, cheeses, and vitamins. My blood measurements stay in the normal range, year after year, even with such an artificially sweet diet, with no diabetic medication.
@@dianasolfest7237 I have a main meal consisting of tofu, tomato sauce, and lots of cheese, sometimes with spices or tikka masala sauce, and lots snacking during the day. And I drink a large amount of water, sometimes flavored/sweet, and sometimes plain. I don't have to count the net grams of carbohydrates because I eat mostly the same foods every day, and I know the total is under 30 to 40 net grams. And my A1C measurements show a high normal number. Other people on ketogenic diets have very different foods, according to their taste. Some eat lots of eggs. Some eat lots of greens. There are lots of exciting videos, including Ted Talks, about the ketogenic diet and its great results. Our entire society is addicted to poisonous levels of sugar and starch, which causes diabetes, obesity, and helps to cause many other illnesses. For type 2 diabetes, most doctors don't even know that there is an alternative to a never-ending increase in drugs due to insulin resistance.

Great talk! Although got little confused when Dr. Roshani said indians eat "flaxseed" after meal as mouth freshener. Not sure about that. "Saunf" is Fennel seeds which serves as mouth freshener/aids digestion.
I remember reading an epidemiological study reporting the average Indian male consumes about 400g (!!!) carbs a day. That may not be a problem if one is physically very active (e.g., manual labor), but most people these days are pretty sedentary. No wonder it leads to abdominal weight gain and associated metabolic diseases.
Fantastic interview! If you substitute noodles for chapatis, you could be talking about Chinese, who have a lot of diabetes and fatty liver disease now.

It’s not surprising to see commendable results and success story , hope ICMR revises its guidelines on diabetes protocols which is still following high carb regimen , with a wrong food pyramid being taught to kids & elders . I empathize with Dr Sandhani on a kind of cancel culture prevailing in ICMR , both fats & proteins are kind of untouchable , with over emphasis on high carbs, which is deeply connected with pharmaceutical & food industry. @@gainjohn it’s basically low carb / moderate protein and high fat, whether it comes from plants or animals it depends on individual choice. Being a vegetarian, I do depend on fats derived from Animals since plants cannot provide all the fats needed.
I found this video very very useful and informative. Being an Indian (strict) vegetarian (no eggs, fish etc), I am often confounded as to how I can cut carbs from my daily diet. It is really a great challenge.
better to just keep it as minimal as realistically possible for yourself and when you do eat carbs, it should be whole grain because the high fiber content in whole grain also helps lower cholesterol and blood sugar.
Great to know that popularization of low carb diet and that reduces sugar levels in India. Diabetics is a impaired carbohydrate metabolic diseases and it is reversible. I am on keto for a year and my HbA1C reduced from 7.3 to 5.9. I stopped all medications (metformin, Crestor and Ramipril). I wish more main stream diabetologist will look seriously into low carb diet as a natural cure for diabetics II.

Tofu: try slicing your block of firm tofu; then freeze it; thaw it; and squeeze the liquid out between paper towels. Then prepare your tofu in the same way that you would meat. Freezing it makes it a sponge for flavor, and it makes the texture meaty, gives it "chew."
I agree with the doctor. I am a certified diabetes educator in North Carolina and I am from India. Most patients don’t know how to follow a vegetarian or vegan keto diet. I give them menus and recipes and successfully lowered their A1C along with behavior modification and exercise. I frequently “walk” my patients while we talk as an office visit. All patients want to get off medications and especially Insulin. Thank you for the great work you are doing in India.

Problem is not with chapatti/roti . Problem is with genetic modifications done to wheat by so called “agricultural scientists “ in late 80s. We are paying for their sins. I consume roti made out of almond flour and use avocado pulp to build the dough. I do not and will not eat chicken/meat/mutton/eggs etc. I get my protein from daal/lentils. Eat lot of raw veggies (non starchy). Light exercises like bethak, dand, shirshashan and pranayama. My health vitals indicate I am doing right things.

Your comment is very vague. What genetic modifications are u talking about? Can you link some studies that support your claim or atleast can you emphasize more on this? While you may not eat meat, good quality meat and eggs are highly superior than dal/lentils.
I have really enjoyed listening to both of you and learnt a few diet ideas to implement -I will certainly be increasing my egg and lentil intake to build more muscle.I think it is wrong to say that we don't learn how important diet is , in medical school -I think we do learn the importance of life style changes in medical school but then there are two very improtant reasons that we doctors forget about these things in our daily practice ,one is the higher training in big medical centres where very highly complex cases are seen and they need a lot of medical interventions and second is that when we go in real life which is fast pace these days, we get swept into the fast life pace of the patients and they ask us to provide instant results which is mostly through medication -we have to work much harder to educate them to make changes in their life style and continue it in the long term -just giving them pills is the easy answer for both the doctor and the patient .Many patients actively resist dr's attempts to change lifestyle and diet bc they want their life to go on as usual.I have this challenge while working with patients who have emotional and psychiatric issues.There are some patients who will listen to me and work on changing life style to reduce stress ,increase exercise ,delay exams,leave school ,take a break from college , ,change diet ,work on spirituality and they will be the ones who have long lasting remissions in their mental health conditions.

We had heavy Dal + ghee diet along with heavy cheese/butter diary diet.Ghee has been forgotten 😢. Butter milk has been forgotten.Curd is regarded as some barbarians food😢😢.In siddha and Ayurveda we have saying "mor perukki,nei urruki,neer kaichi" sappidanum which means liquid ghee,Butter milk refined naturally from hand method in home,hot water to moderate level is mantra for good health but high fat foods like ghee and foods like butter milk,curd have been almost destroyed and vegetarianism has been turned into a kind of borderline veganism by eliminating almost all diary products and dals are also slowly going out.Even in mythology stories lord Krishna goes out steals and eats butter.But why butter,ghee and diary products are slowly disappearing is a mystery within vegetarian diet itself

Not possible, since all of our diets are based around a carb, whether it be rice, roti or dosa, we need to shift away from this diet imposed on us, which was starvation by the british.
There are a group of Dr. / researchers advocating going left i.e low carb / keto / carnivour and another equally evanqeliatic Dr. / researchers advocating going right i.e pro carb Both groups present supporting research / papers. India has a huge variety of millet flours and breads which though have carbs are still rich in vitamins and minerals. The variety of fresh fruits and vegetables plus high protein lentils and legumes in India are immense so basic Indian food is very healthy if cooked properly. The western influence of high fat high carb fast food has played a huge role on the youth. Most street foods are now loaded with cheese and butter unlike before!
We advise our patients with diabetes to check their levels two hours after millet rotis and adjust quantity accordingly, since millets have 60-65% carb along with the micronutrients. It's ultimately about balance and moderation.
Very informative. To make it evidence base, make ur team & keep record. Follow up ur patients for few yrs even after they have reversed diabetes. One does not need to go to gym. Being a physical trainer, give them home bound exercises like spot walking, marching, squats, stair climbing & Nitric Oxide dump / antigravity exercises. If i was living in India would have helped u. Intermittent Fasting is a very powerful tool. I m a retired anaesthesiologist but help people as a service.
Mercola's Nitric Oxide has few exercises that release nitric oxide. This brings abt vasodilatation & brings down BP. Freedom from diabetes organisation , has Antigravity exercises that help bring down Sugar. Mercola's NO Dump also bring down bl sugar by 2 to 4 mmols. Doung either if these exercises, stabilises bl sugar hence reducing the dose of medication.

Whatever this lady says is problem of Indian cities, people who forgot traditional THALI and western food lovers. Indian traditional THALI is based on "Chouras Aahar" which very well balances the carbs, protein and fat. We do not need non-veg food.

I ate 30 eggs / day for 12 years, to build my body didn't get protein powders or couldn't afford them so eggs and meat was my diet for 12 years to build my body, plus a gallon of milk daily for 12 years

Yes, there are treatments for type 1 diabetes and obesity in kids. Lifestyle change plus safe insulin management can allow for a fulfilling healthy life, while living with type 1.
This has been a question I've long had. All of my friends here in the US are going vegetarian or vegan, and the social pressure to conform has been noticeable. No one wants to hear about low carb/keto (so I no longer bring it up) even though all are on various medications.
That trend to vegetarian and vegan in some pockets of thr western world is truly eye opening, I just don't get it. Fairly obvious the factory made, highly refined sugar, flours, seed oils found in take away and highly processed "food" is causing all the disease
In fairness Clay, I'm not even vegetarian never mind vegan but yes, if you look at the literature, a whole food plant based diet to this day has been the only diet which has ever reversed heart disease. That's just a fact. Stop wasting time listening to influencers on UA-cam and just look at the literature.
If I am not wrong, in panchakarma, there is already one treatment which is adviced to be done 1-2 times in a year where you basically consume a small amount of ghee for a week and then do a rechak. It's obviously not a lifestyle replacement but something tells me a section of ayurvedic/naturopathic philosophy already had considered this but failed to really make masses understand the 'why' part like it happened with many ancient cultures and some of their traditions which actually made sense even in changing times Also, i don't see people embarrassed to be eating meat but over consuming of meat is definitely questioned because unlike most of the western world, most of India is hot except for 2 months of winter, plus long history foreign invasion and general poverty made regular meat eating to get associated with higher wealth like being overweight was. These ideas shaped because of recent historical events and 300-400 years of foreign rule trying to impose their ideas and lifestyles can overwrite a lot of what used to take place before in avg individual's life

Dr. Sanghani, great to hear about low carb from a doc of my culture/ethnicity. I've been doing low carb for a while and love it. The hardest part is when I visit friends or family and they want to stuff me with carbs (well meaning of course). Its a little hard to convince them I want butter instead of roti with sabji :-).
@@jewslikefunk switch to coconut/almond four tortillas for chapatis/rotis. You can even make almond flour naan. Cauliflower rice instead of rice. There are also millets that can be used instead of rice. Lots of low carb veggies like cauliflower, kohlrabi, zucchini can be used for the sides.not easy and time consuming but can be done with food prep.

Glad to see an indian doctor keeping the context of indian cultural practice in mind when working with her patients. In my own home i tried to get my mom to eat more eggs or chicken but her heart is not in it. She craves the things she ate growing up. So i made small changes. Like dosa, which is normally made with 3:1 ratio of rice to dal. I asked her to make it with a mix of soaked dals only (no rice) grind and add some shredded veges and use that to make dosa. My daughter hates regular dosa but will eat dal dosa (adai). It became a thing for my mom to please her granddaughter and would make it often and now my mom also is eating dal dosa, trying different combo of dals. yes its still carbs but at-least more protein and less processed than regular dosa and she is happy eating indian food. Small wins. And yes her A1c has gone from 6.1 to 5.8. I doubt i can get a lower than that but at-least it quite a bit better than before.

Deepa, it's not only the dosa, it's the vegetables as well... potatoes and starchy vegetables, fruits, such as mangoes, all Indian sweets are you bad .. so really you have to look at everything you put in your mouth... stay within a low carb, moderate Protein and high vegetable fats...🙏🙂

As an Indian who is not a vegetarian, I think we have some of the worst diet habits.
Vegetarian is not healthy if the composition of the meals is high processed carbs, veggies and dals cooked in lower quality seed oil , sugary deserts.
I have changed my diet to higher protein and healthy fats, including red meats and eggs. Got rid of most carbs which I don't miss at all. I don't take much fruits either because they are high in sugar.
And I feel light, agile, alert, sleep better, I can exercise a lot more.

@@sanpat2220 no Sir. The good thing about eating a high fat and protein diet is that overeating becomes hard. It is very difficult to eat a lot of meat but it is so easy to eat a lot of rice, sweets and bread.

Logical doctor. Im on intermittent fasting 24 hours and low carbs i lose 36 lbs. and pre diabetic... im loving it. Its a challenge no Rice, no bread, no sweets, no sugars as much as possible. Keep what you're doing doctors... we can prevent diabetes
I aplaud the efforts of the host to hit on such an important region centric advice and interaction. Indians have been having Chapati every day all their lives minimum 2 meals a day. I am type 2 diabitic and have just started avoiding grains and Chapatis. It is already showing good improvement. Thanks to Dr Sanghani as well for her efforts and guidance.

Dr, very enlightening about food & cultural beliefs. I am in Sydney Australia and 90% of my Indian friends call themselves non- vegetarian and eat little protein. Most protein eaten are at restaurants/ take away which is always eaten with heavy carbs. However they eat lots of carbs & sugars together in the form of dessert. Protein with greens/ vegetables are rare.
I have an Indian student living in my home, she is vegetarian and comes from a state in India that is basically vegetarian. She is not all that healthy. It occurred to me that if being vegetarian was healthy it would show up in the stats. If the average lifespan in India was, say, 120 v 80 in the 'west', then we would have to look seriously at why. Yet, India is becoming the diabetes capital of the world. It was good to hear Dr. Sanghani because culture is an important aspect of health and what you eat.
That’s because vegetarian still includes animal products high in saturated fat like dairy and also oils that are processed liquid fat with 14g of fat in 2 tablespoons.

There are multiple factors that contribute to lifespan rates including socioeconomic status, genetics, etc. Diet is a part of it but not the sole reason. Think a little.
India is emblematic of why simply going "plant based" is not enough to ameliorate metabolic dysfunction. India is emerging as one of the diabetes epicenters of the world. India has one of the largest percentage of vegetarians of any country in the world, and this adherence to a plant based cuisine is the product of centuries of religious and culturally fueled vilification of meat consumption. Even among the groups that do eat meat, the level of meat consumption is paltry. Meat is mostly used, even among those who have omnivorous diets in India, as a side dish or condiment. Hence, if the spurning of meat was the solution to our dietary ills the efficacy of vegetarianism would have manifested in India. The exact opposite of better health has happened instead. What this removal or reduced consumption of meat has done in India is made the people reliant mostly on starches and seed oils for their calories, thus engendering diabetes on an epidemic scale. This issue hits tragically too close to home, as both of my parents are from India. While they were/are meat eaters, they eat a minuscule amount, while relying heavily on starches. The result is my father died of complications of diabetes and my mother is afflicted with diabetes. Nearly all of our Indian friends are themselves diabetic or have a member in their family who is diabetic. We need more Indian physicians like Dr. Sanghani to work within the culture, and disabuse people of the notion that copious amounts of rice, bread, (i.e. naan and roti) potatoes, and lentils are sacrosanct dietary components. Thank you Dr. Sher and the team at Diet Doctor for giving her a platform to speak.

Not just the message of low carb but red meat consumption is also very very important. Poultry and fish which Indians do eat in small amounts is better than vegetarian vegan, but red meat is optimal. This was awesome to hear the experience in Indian context. As a nursing faculty I find it often confusing and paradoxical to teach nursing students about low carb and high fat diet when the dietary advice in textbook for every disease including cancers and metabolic diseases is LOW FAT diet. It's quiet a struggle to get the idea across to young professionals early on.

Am pre-diabetic had gestational diabetes have a strong genetic background for type 2, mom's and aunts got type 2 in 30's..however I think I have avoided so far at 40 is by limiting carbs especially rice

Lots of good information. I find that Aboriginal Indians have same problems as our diet changed drastically.
I was about to graduate from a maximum dosage of metformin to glypizide (and eventually to insulin) for my type 2 diabetes when I decided it was worth the "misery" of a ketogenic diet to get out of the trap of increasing medications for my chronically high blood glucose and slight neuropathy. I was really worried at first, because I only like to eat carbohydrates! No meat, no vegetables, just mostly grains and sugars. It is a psychological thing based on childhood trauma. But what I discovered was that it is possible to stay in healthful ketosis on a diet just like this! I just eat special ketogenic sweets, like protein bars, and tofu, cheeses, and vitamins. My blood measurements stay in the normal range, year after year, even with such an artificially sweet diet, with no diabetic medication.

@@dianasolfest7237 I have a main meal consisting of tofu, tomato sauce, and lots of cheese, sometimes with spices or tikka masala sauce, and lots snacking during the day. And I drink a large amount of water, sometimes flavored/sweet, and sometimes plain. I don't have to count the net grams of carbohydrates because I eat mostly the same foods every day, and I know the total is under 30 to 40 net grams. And my A1C measurements show a high normal number.
Other people on ketogenic diets have very different foods, according to their taste. Some eat lots of eggs. Some eat lots of greens.
There are lots of exciting videos, including Ted Talks, about the ketogenic diet and its great results. Our entire society is addicted to poisonous levels of sugar and starch, which causes diabetes, obesity, and helps to cause many other illnesses. For type 2 diabetes, most doctors don't even know that there is an alternative to a never-ending increase in drugs due to insulin resistance.

Great talk! Although got little confused when Dr. Roshani said indians eat "flaxseed" after meal as mouth freshener. Not sure about that. "Saunf" is Fennel seeds which serves as mouth freshener/aids digestion.
Not sure what the literal translation for "mukhwas" was! Gujarati folks chew flax seeds after meals. Saunf too (fennel seeds)

I remember reading an epidemiological study reporting the average Indian male consumes about 400g (!!!) carbs a day. That may not be a problem if one is physically very active (e.g., manual labor), but most people these days are pretty sedentary. No wonder it leads to abdominal weight gain and associated metabolic diseases.

It’s not surprising to see commendable results and success story , hope ICMR revises its guidelines on diabetes protocols which is still following high carb regimen , with a wrong food pyramid being taught to kids & elders . I empathize with Dr Sandhani on a kind of cancel culture prevailing in ICMR , both fats & proteins are kind of untouchable , with over emphasis on high carbs, which is deeply connected with pharmaceutical & food industry. better to just keep it as minimal as realistically possible for yourself and when you do eat carbs, it should be whole grain because the high fiber content in whole grain also helps lower cholesterol and blood sugar.
Very happy that doctors are open to say that they are not qualified to discuss nutrition. Dietitian are more qualified for that.
Great to know that popularization of low carb diet and that reduces sugar levels in India. Diabetics is a impaired carbohydrate metabolic diseases and it is reversible. I am on keto for a year and my HbA1C reduced from 7.3 to 5.9. I stopped all medications (metformin, Crestor and Ramipril). I wish more main stream diabetologist will look seriously into low carb diet as a natural cure for diabetics II.

chapati is not cooked with any significant amount of seed oil. It's just wheat.
Tofu: try slicing your block of firm tofu; then freeze it; thaw it; and squeeze the liquid out between paper towels. Then prepare your tofu in the same way that you would meat. Freezing it makes it a sponge for flavor, and it makes the texture meaty, gives it "chew."
I agree with the doctor. I am a certified diabetes educator in North Carolina and I am from India. Most patients don’t know how to follow a vegetarian or vegan keto diet. I give them menus and recipes and successfully lowered their A1C along with behavior modification and exercise. I frequently “walk” my patients while we talk as an office visit. All patients want to get off medications and especially Insulin. Thank you for the great work you are doing in India.

Problem is not with chapatti/roti . Problem is with genetic modifications done to wheat by so called “agricultural scientists “ in late 80s. We are paying for their sins.
I consume roti made out of almond flour and use avocado pulp to build the dough.
I do not and will not eat chicken/meat/mutton/eggs etc.
I get my protein from daal/lentils. Eat lot of raw veggies (non starchy). Light exercises like bethak, dand, shirshashan and pranayama. My health vitals indicate I am doing right things.

I have really enjoyed listening to both of you and learnt a few diet ideas to implement -I will certainly be increasing my egg and lentil intake to build more muscle.I think it is wrong to say that we don't learn how important diet is , in medical school -I think we do learn the importance of life style changes in medical school but then there are two very improtant reasons that we doctors forget about these things in our daily practice ,one is the higher training in big medical centres where very highly complex cases are seen and they need a lot of medical interventions and second is that when we go in real life which is fast pace these days, we get swept into the fast life pace of the patients and they ask us to provide instant results which is mostly through medication -we have to work much harder to educate them to make changes in their life style and continue it in the long term -just giving them pills is the easy answer for both the doctor and the patient .Many patients actively resist dr's attempts to change lifestyle and diet bc they want their life to go on as usual.I have this challenge while working with patients who have emotional and psychiatric issues.There are some patients who will listen to me and work on changing life style to reduce stress ,increase exercise ,delay exams,leave school ,take a break from college , ,change diet ,work on spirituality and they will be the ones who have long lasting remissions in their mental health conditions.

We had heavy Dal + ghee diet along with heavy cheese/butter diary diet.Ghee has been forgotten 😢. Butter milk has been forgotten.Curd is regarded as some barbarians food😢😢.In siddha and Ayurveda we have saying "mor perukki,nei urruki,neer kaichi" sappidanum which means liquid ghee,Butter milk refined naturally from hand method in home,hot water to moderate level is mantra for good health but high fat foods like ghee and foods like butter milk,curd have been almost destroyed and vegetarianism has been turned into a kind of borderline veganism by eliminating almost all diary products and dals are also slowly going out.Even in mythology stories lord Krishna goes out steals and eats butter.But why butter,ghee and diary products are slowly disappearing is a mystery within vegetarian diet itself

Iam vegetarian and seen past generation not having diabities for late seventies and seen them living until late 80s and early nineties not having even blood pressure It is the changed eating habits and not having excesice is the reason for increase diabities Once the workers were healthy and even they are becoming diabitic Everyone is having backers food and sweets regularly and so are the sweet juices from shops Childern barely walk Always vehicles for them

The variety of fresh fruits and vegetables plus high protein lentils and legumes in India are immense so basic Indian food is very healthy if cooked properly. The western influence of high fat high carb fast food has played a huge role on the youth. Most street foods are now loaded with cheese and butter unlike before!
We advise our patients with diabetes to check their levels two hours after millet rotis and adjust quantity accordingly, since millets have 60-65% carb along with the micronutrients. It's ultimately about balance and moderation.

Whatever this lady says is problem of Indian cities, people who forgot traditional THALI and western food lovers. Indian traditional THALI is based on "Chouras Aahar" which very well balances the carbs, protein and fat. We do not need non-veg food.

I ate 30 eggs / day for 12 years, to build my body didn't get protein powders or couldn't afford them so eggs and meat was my diet for 12 years to build my body, plus a gallon of milk daily for 12 years

This has been a question I've long had. All of my friends here in the US are going vegetarian or vegan, and the social pressure to conform has been noticeable. No one wants to hear about low carb/keto (so I no longer bring it up) even though all are on various medications.
That trend to vegetarian and vegan in some pockets of thr western world is truly eye opening, I just don't get it. Fairly obvious the factory made, highly refined sugar, flours, seed oils found in take away and highly processed "food" is causing all the disease

In fairness Clay, I'm not even vegetarian never mind vegan but yes, if you look at the literature, a whole food plant based diet to this day has been the only diet which has ever reversed heart disease. If I am not wrong, in panchakarma, there is already one treatment which is adviced to be done 1-2 times in a year where you basically consume a small amount of ghee for a week and then do a rechak. It's obviously not a lifestyle replacement but something tells me a section of ayurvedic/naturopathic philosophy already had considered this but failed to really make masses understand the 'why' part like it happened with many ancient cultures and some of their traditions which actually made sense even in changing times
Also, i don't see people embarrassed to be eating meat but over consuming of meat is definitely questioned because unlike most of the western world, most of India is hot except for 2 months of winter, plus long history foreign invasion and general poverty made regular meat eating to get associated with higher wealth like being overweight was. These ideas shaped because of recent historical events and 300-400 years of foreign rule trying to impose their ideas and lifestyles can overwrite a lot of what used to take place before in avg individual's life

Dr. Sanghani, great to hear about low carb from a doc of my culture/ethnicity. I've been doing low carb for a while and love it. The hardest part is when I visit friends or family and they want to stuff me with carbs (well meaning of course). Its a little hard to convince them I want butter instead of roti with sabji :-).
How does one get into low carb with Indian food? I struggle everyday with this because it’s such a task
@@jewslikefunk switch to coconut/almond four tortillas for chapatis/rotis. You can even make almond flour naan. Cauliflower rice instead of rice. There are also millets that can be used instead of rice. Lots of low carb veggies like cauliflower, kohlrabi, zucchini can be used for the sides.not easy and time consuming but can be done with food prep.
Good information. Never heard people chewing flax seed after a meal. People chew fennel seeds but that’s different.
Some Gujrati folks chew flax. Fennel is different and more popular after meals.
