High volt DC battery 🔋 gives more current and rate of flow of electrons increase, due to this electrolysis will fast or if you need slow observation then use low volt battery

Steel plating is not possible coz steel is not a pure metal, it is a mixture of several metals.
To avoid rust you can do zinc plating.

You should have used battery in place of main power. Main power is AC which is alternative current wherein polarity changes this is not the case with DC. Due to this you were getting uneven plating of Cu. Try the same experiment with Battery, you will have better results. Any ways Good videos.

I didn't had a big battery at that time so I had to use the adapter.
