RESTAURANT STYLE CHICKEN JALFREZI | Quick Stir Fry Chicken Recipe With Spices

  • Chicken Jalfrezi is a stir fry dish derived from the Bengali word jhal, where jhal means spicy hot and frezi means to stir fry with veggies of choice. Jalfrezi recipes appeared in cookbooks of British India when the cooks used the leftovers from roast chicken, and stir fried them with bell peppers, onions, tomatoes along with a few spices of their choice. Though I didn't do with left overs of chicken roast but you've got another idea what you can do with those cold cut meat which sometimes taste so boring the next day.

    Ingredients required for making Chicken Jhalfrezi recipe -
    * 560 gm/1.2 lb boneless skinless chicken thighs cut into small pieces. You can even use chicken breast. Please do not brown the chicken too much. Just a little change of color will be fine.
    * 128 gm / 5 oz or half of a large red bell pepper(capsicum)
    * 145 gm / 5 oz or half of a green bell pepper (capsicum)
    * 1 small (sliced) + 1 medium onion (finely chopped)
    * 24 gm/ 1 oz or 7 large garlic cloves
    * 30 gm/ 1 oz / 2 inches length ginger
    * 1 large ripe tomato
    * 1 dried bayleaf
    * 1 inch cinnamon stick
    * 3 green cardamoms
    * 3 to 4 cloves
    * 1/2 teaspoon turmeric powder (haldi)
    * 1 teaspoon kashmiri red chilli powder. Please adjust proportion according to your tolerance of heat level. You can even use 1/4 th teaspoon cayenne pepper along with a teaspoon of paprika for the color.
    * 2 teaspoons heaped curry powder. If you want to make your own curry powder then here is the recipe - • HOW TO MAKE CURRY POWD...
    * 1 teaspoon garam masala powder. If you want to make your own garam masala powder then here is the recipe - • 3 MUST HAVE HOMEMADE I...
    * 1 teaspoon kasoori methi (dried fenugreek leaves)
    * 10 to 12 black peppercorns coarsely crushed. Use half to season chicken and the other half while making the curry
    * 1 teaspoon salt or to taste
    * 1 teaspoon sugar
    * 2 tablespoons tomato ketchup
    * coriander leaves (cilantro) for garnish
    * 4 tablespoons oil
    Serve this with rice or roti. I even serve this with noodles or pasta.

    Bumbi I have tried many of your recipes and have never been disappointed. This is one of my favourite recipes. I've also looked at other chefs recipes but they are not as good as yours. Thank you so much for sharing your recipes and cooking knowledge that makes our meal times very tasty.

    Totally agree! Chicken thighs tastes much better with more juices and they are not dried. This dish looks great! Love your teaching motto “I made the mistake so you don’t.” You are a very good chef!

    This lady's voice is very soothing. Almost hypnotic!
    Jalfrezi was the first curry I tried in an Asian restaurant over 35 years ago and it is still one of my favourites.
    Have successfully tried other recipes but there is something about this one which makes it so simple yet very tasty.

      @@CurriesWithBumbi I have just made this for my wife and I. There is a supply issue with fresh tomatoes in southern England. 4 supermarkets tried and all out of stock so used tinned plum tomatoes. Meant I had to run the tomatoes down a bit more because of the excess liquid. Your tip for the Methi leaves was was fantastic (now I know!). No ketchup so tomato puree. All in all it tastes fantastic, great depth of flavours. Thank you so much. Also love the historical/native perspectives on the dishes.

    Made this today but made it without meat, oil, salt or sugar. I added extra vegetables and a couple of tablespoons of coconut yoghurt near the end. It was absolutely amazing. Cloves and cardamom is my new favourite spice combination. Thanks Bumbi

      We get most of our salt from processed foods, don't be scared to salt your cooking, it'll taste much better and it's not unhealthy. We need salt to survive. Just cut down on processed foods if you're worried about salt because that's where 90% of it comes from.

    Loved the jalfrezi recipe. I've seen it in menu cards when once upon a time we used to go out eating 😃. Now thanks to your channel, which has been such a blessing in the pandemic, i can think of rustling up restaurant-style food!!

    I always use chicken thighs in my curries. For this, I would also add some fres green chillies sliced diagonally almost at the end. I have a friend who calls his jalfrezi a @Joe Frazier@ after the boxer as he likes it to have a great punch!

    Would have expected a few more chillies in this tbh. Always like adding small Birds Eye chillies to mine. Really like the idea of adding chicken thighs, I’ll do that next time. Overall it looked delicious so well done.

      You can increase or decrease the amount of chillies according to your preference

    Lovely dish however i would suggest chicken breast but use the velveting procedure. This way the meat will be super tender.

      I would say double the quantity of all except chilli powder, black peppercorns, and sugar.
