How to Can Hot Pepper Mustard

  • Canning becomes a tradition. So much, sometimes, that I forget some recipes aren’t in everyone’s recipe box. A case in point: this hot pepper mustard.

    The idea seems odd, but I've become so used to it on our family table at so many different times of the year. We eat this on everything: nachos (amazing!), pizza (don’t give me that look), meat, sides... it just adds an extra pop of spice and flavor. So far, everyone that tries it falls in love.
    Now, it's your turn!
    Ingredients:
    - 6 cups finely chopped hot peppers
    - 4 cups white distilled vinegar
    - 3 tsp canning salt
    - 2 cups yellow prepared mustard
    -1/2 cup monk fruit sugar or granulated white sugar
    - 1 cup water
    - 7 tbsp cornstarch (USDA recommends using clear jel to thicken canned recipes)
    Instructions:
    - Prepare peppers by cutting off the stem end. Remove most of the seeds and pith depending on the heat level you desire. Chop finely in a food processor. Pour into a heavy-bottomed 8-quart stockpot.
    - Stir in vinegar, salt, mustard, and sugar.
    - Bring to a boil, reduce to a low boil, and cook for 10 minutes.
    - While cooking, whisk together the water and cornstarch and set aside.
    - After the mixture has cooked, remove the pepper mixture from the heat and whisk in the prepared cornstarch slurry.
    - Return to a boil and continue to whisk until the mixture boils throughout.
    - Once boiled, remove and pour into prepared sterilized pint canning jars. Wipe off the rims of jars. Fit with lids and rings.
    - Place in a boiling water bath, covering the jars with at least 1 inch of water. Return the water bath to a boil and process for 25 minutes.
    - Remove from the water bath and cool on a rack for 8-12 hours. Store in a cool dark place.

    Slapped on deli ham (thin sliced) and rolled around roasted asparagus spears is MY fave way of using hot mustard! Asparagus ham cigars. Great with cocktails like Bloody Marys!

    So good on a cheeseburger or a ribeye on the grill as a brush on raw meat prior to your chosen method of grilling. Allmy friends love this

    I'm certainly going to make this. I know it's delish. Thx for the recipe. I've been gardening and preserving foods all my life, so this us something different to try. Good tip: do NOT tip your jars to get the water off. It can break your seal. Once they have processed the allotted time, turn burner off and let sit for 10 minutes. Take top off canner and let sit 10 more minutes. That helps to insure a good seal. You can dab that little bit of water on top of the jars off with a paper towel. Thx again.

    I’ve been making this for several years & I share it with many ppl
    Everyone loves it. I used flour only because the original recipe said.
    I prefer corn starch. Our garden is going crazy & I refuse to let it go to waist.

    Just a quick note: The heat of a pepper is not in the seed. The capsaicin is in the connective membrane. There might be a host of other valid reasons to remove them as you do (texture, can be bitter, etc.), but heat isn't one of them.

    THANKS! I know this video is a couple of years old but Ill comment anyways. Summer is nearing its end here in NW Ohio and we can get our first freeze as early as late september. I have already canned four dozen jars of peppers and still have a ton left in my garden. This is just what I was looking for! I'm going to get on it tomorrow. My kids love my peppers and pickles so I'm gonna run this by them. Thanks alot for your great videos and the ease in which you present everything.-----Liked and subbed.

    Caleb wouldn't clear gel be a better more stable thickener for canning ? I love Colman's mustard but find the heat fades after a while.

      @J RT Clear Gel is a modified corn starch that does not thin out after being used in canning recipes. Think pie filling but not as thick. you can find it on amazon. Look up Jeni Gough she explains thickeners in one of her videos called thickening agents and how to use them good luck xx

    I knew from the moment I saw you make this Hot Mustard I had to make so too and I did. It was near the end of the growing season here and I had a very hard time finding the hot peppers but I did find a large basket of them and I think it made about 6-7 jars of mustard, we love it!! I will be growing some of these peppers this year just so I can make more of this fantastic mustard, it is not too hot just the perfect heat. Thank you for sharing your great ideas and videos, I'm subscribed and look forward to seeing more ideas.

    so...cornstarch doesn't break down during the canning time??? im so happy if that's the case! i've been avoiding cornstarch for canning because i read it breaks down but that must be only for pressure canning!

      Experiment in the kitchen and find the ratio that fits your needs. Consider starting with 1/3 cup monk fruit sugar for 1 cup sugar. Monk fruit sweeteners have been categorized as Generally Recognized as Safe (GRAS) by the U.S. Food and Drug Administration (FDA) since 2009.

    WOW -thats hot stuff🥵🌵I'm unfortunately no longer able to eat spicy due to esophageal problems caused by too much acid & citrus in my younger years😩But if I could I would definitely try this out. I 🤔 on eggs Benedict, pizza etc.
