    When exploring culinary Puerto Rico, what better place to start than a market? And who better to serve as our guide than Chef Wilo Benet, A Culinary Institute of America graduate and one of the island's premier chefs whose restaurant Pikayo is a beacon to all who visit in search of the tastes of Puerto Rico. He'll give us a basic course in the Puerto Rican market basket at the Plaza del Mercado, a small, but lively market in the Santurce area of San Juan. Here, we get our first look at the bounty of this region where sometimes the freshest ingredients like bananas and avocados are growing outside the back door.

    The only thing is that our traditions was to use natural ingridients ....no artifitial sazón or adobo... We make our fresh adobo with garlic, pepper, orégano, salt, vinegar and olive oil. The color was, achiote seeds boiled in oil (our family traditions haven change that) . The other thing is that the pasteles masa, the original, is a mixture of green bananas, some green plantains, calabaza y yautía

    Caballero Chiles/Ajices Caballeros look like very small beads and are very spicy, the ones you are showing are Ajices Picantes/chiles.

    Esto habría sido mucho mejor si es narrado por un puertorriqueño. Estoy seguro de que hay chefs puertorriqueños allí. Algunos de nosotros estamos cansados de que la gente blanca esté en todas partes. Solo digo.

      Why always some people envy and hates us, this is about Puerto Rico no Mexico. Of course you cant compare Puerto Rico a little Island 100 miles long by 35 wide with Mexico who is huge and have 120 millions peoples and also one of the most complete and diverse kitchens in the world and as a puertorrican I love it and visit many times and I'm proud of Mexico and all the latin countries but also very proud of my little Island who accomplish so much in arts, music, sports, science, etc. As Latin Americans we need to support each other and not complaining and criticizing the others.
