Thanks for the tip about slicing the chicken confidently! I think when you hesitate, that's why it can come out uneven. This looks too yummy, I can't wait to try it!
I was kind of surprised to see you didn't cook the chicken in the sauce but instead pre-cooked it. I'll have the try back! What temperature should my chicken be when I take it out of the pan for the first time?
It should be around 155. It's almost cooked through at that point. Putting it back just to warm it back up to 165.

Do you use salted butter?
I almost always use salted butter unless I'm baking and don't want the extra salt.
