One of the things I like about your videos is how much they remind me of my late mother's approach to cooking. I think she considered measuring spoons to be tools of the devil. She knew how much salt was in a couple of pinches or how much flour was in the palm of her hand. And the results were always stupendous.

I’ve always done piccata really saucy and with pasta (usually linguine, though it goes great with penne or such if you thicken the sauce more). We’re not in Italy, we can make it how we like it!

You can use a fork to crush some of the capers as they heat. Adds a lot of flavor.

Made this last night, it is as good as any chicken piccata we have ever had in the many excellent local Italian restaurants we eat at. It seals it for me, you are hands down the best Internet chef going, I have tried 50 things from other chefs over years and everything somehow comes up short. I made this this evening with some minor substitutions per my family's tastes and it came out very lovely.. TY. I've learned quite a bit from you as far as cooking pasta and better techniques. Being a southern lad we didn't cook a lot of pasta growing up, I dated a an Italian girl from PA one time and the first time I made spaghetti for her she freaked out on me..lol. I clearly didn't do it right.
Oh and please share the secret to getting your kids to try foods. I have 2 and I can't seem to get them to try new stuff. 🙂

Great recipe, made your braciole last night, I shared a bunch of your videos too because I like your no stress approach.
With braciole I did have to adjust the sauce because they wanted angel hair pasta, but no biggie I just cut the tomato paste so it'd be lighter and it was still good.
Thanks! It's been so long since I made braciole, that I have plans to make another video, but with a larger cut of meat and maybe some different ingredients. I do love the raisin/pine nuts version the best though.

This recipe is terrific, I just made this recipe and my family loved it. I wasn't quite sure what to do with the sliced lemon is it just for garnish or should I have cooked them? I have made a couiple of your other recipes and those were also excellent. I really want to make the one with the Sausage, Gorgonzola, and Peas. :)

Your son knows his stuff
I've never floured the chicken before... have to try that... Most of the time I grill the chicken for that char taste... Pretty much make everything else the same... I use Vermouth or Rice Wine depending on what I have on hand... I might also say that this same recipe tastes great with zucchini noodles too... Zucchini noodles are a good way to keep the carbs lower... if you like that sort of thing...
Funny... I make a lot of similar dishes but never really know their names or exact ingredients... The Irish in me must have some Italian somewhere... lol!
it might be easier to butterfly the chicken and cook it rather than keep cutting to smaller pieces. Cook the big pieces then cut to size. Less fussing/micromanaging in the pan.
Hey I have been making your chicken piccata all the time, with chicken thighs lately. I love this recipe and you explain it so well just like all your other videos too. I just have a question about your famous 14" pan. On average how much more are you able to fit on that thing? I have a 12" stainless steel skillet i really like but the idea is tempting to fit more in the pan. For example i can fit 4 average sized boneless chicken thighs on my pan. Also 3-4 burger patties if making burgers on the pan. How many do you think you can fit? I ask because i wanna know if this 14" pan is really worth having another pan in the cupboard taking up real estate ya know? I know in long island you can fit a ton but i live in brooklyn and the space is more cramped in my apartment, and i try to protect the space in the cupboards. lol. thanks keep doing what you do. ive taken countless tips from you.

Hey man. At full heat you will get about 1 hour. At medium probably two. I wouldn't do a long braise on them or anything like that.

This sounds delicious and easy to make with all my favourite ingredients. Tomorrow I'll try it. I understand the dish really doesn't need parmiggiano, but can it hurt or even does it enhance the different flavors, when sprinkled over the plate with the pasta?
Thanks! You can add anything you want and should. If you like parmesan, go for it.
Does putting the butter cubes in the flour actually make a difference vs just putting the butter and a little flour right in the pan?
No difference. It's just an easy way to add a touch of flour to slightly thicken it with the butter.
How do you clean your pan?
Is there anything that can be used instead of capers? Really don't like the taste of them. Or is this just a recipe I should avoid? (New to the channel so don't know if this has been explained in another video!)
Capers are very important in this dish. You could try subbing in artichoke hearts.
I'm allergic to parsley. Do you think fresh spinach could work?
You can just omit the parsley. Parsley is more to add freshness than bold taste. Spinach would be nice. You can throw the leaves (baby spinach) right at the end and toss quick to wilt. Enjoy!

You made me hungry and inspired me. I made some Piccata. I didn't have any fresh lemons in the house, but I had a jar of preserved lemons I made a while back. I dice a couple of pieces really small. It worked just fine!! You have become one of my favorite cooking channels. And not just because of your recipes - which are fantastic - but because you don't yammer away incessantly - you are to the point and give good clear instructions. I love capers, so I always add a bit more than the recipe asks for. I've also found that mashing a bit of the capers early on helps spread the caper goodness about.

I made it for my girlfriend last night after a hard day at work and completely hit it out of the park. Honestly we were both surprised. Ok I've made a lot of these and there REALLY good. My man knows WTF he's doing. But.... asking a young male to grade your food and expecting anything but MOOOOOORRRREEE and IT TASTES AMAZING might not be fair 😂
Don't you remember how we ate for that period of our lives. I don't think I can remember a time when I wasn't hungry. Seriously though your food is amazing! Tell the boy he sells it perfectly. He makes me hungry every time.
This is probably my family's favorite dish that I make, especially my daughter. It's one that she can't get enough of. My take on it is close to yours. I'm going to try some of what you differently to see how it goes. Their favorite part of the sauce, so I make a double portion of it. It takes extra effort since I have to do two batches of chicken, and doing that requires me to clean out the pan for the second batch so that the fond doesn't burn (I really need to get a second saute pan).
Even if you have to “clean out the pan,” as you say, for your second batch, you can save that fond: just deglaze with a minimal amount of liquid (broth or wine, I would use wine. Set aside, add later. Reduce as needed. Never toss out pond! That’s the key to the flavor, especially sauces. It’s the magic ingredient!
