  • You'll need:
    3 to 4 quarts beef or vegetable broth
    5 to 6 cups thinly sliced green cabbage
    11/2 to 2 cups chopped carrots
    1 large onion chopped
    3 large beets peeled and julienned
    3 to 5 large potatoes peeled and chopped
    3 to 4 cloves of garlic diced
    6 ounces tomatoe paste
    3 to 6 bay leaves
    1 tablespoon apple cider vinegar
    1/2 to 1 teaspoon sugar
    Pepper to taste
    2 teaspoons salt
    2 to 3 tablespoons olive oil
    Directions:
    1. Bring to a boil the broth with bay leaves in a 2 gallon pot.
    2. Add cabbage and bring back to a boil.
    3. In a separate large pan, add olive oil,carrots, and onions cook over med heat for 5 to 7 min. Add beets and continue to cook for another 5 min.
    4. Add carrots,onions,beets,potatoes, and tomato paste to the pot with the broth and cabbage. Stir well and bring to a boil and reduce heat to low for 20 to 25 min.
    5. Add apple cider vinegar,sugar,salt,pepper, and garlic. Let stand for 10 to 20 min and serve.
    You may serve this with yogurt or sour cream and sprinkle some fresh dill.

    Try the Version my mother from Poland made.
    Grate the beetroot, and just add vinegar, sugar and salt until the taste is nice and balanced.
    Also try Bigos, a stew with cabbage and beef/polish sausage
